										<content:encoded><![CDATA[<p>A day late or two late (I&#8217;m my own boss on this, so I&#8217;ll just have to write myself up about my time-management skills,) but a good one. This is an interview with my friend Gustavo, who grew up in Queens and is now living in Peru. We talk about food and cooking, and then a good amount about his history and &#8220;rock and roll days.&#8221; I met Gustavo when he and his family stayed at my house for a few days on their way out of the country. We had a great time back then, and it was nice to catch up with him for this conversation. This episode also has a shameless attempt to get a specific sponsorship. <p>This here is the first of two parts of an interview with my friend Jonathan Wu, chef and owner of Fung Tu on the lower east side. We go through his entire work history, and thus he won&#8217;t ever need a resume again because he can just link to this episode (that&#8217;ll work, right?)  There is a long discussion about fish butchery, as well as some juicy Per Se tales.
