Recently, I have been informed of a new public health awareness campaign focusing on African Americans and Stroke.&lt;br /&gt;&lt;br /&gt;Stroke is the number #3 cause of death and disabilty among African Americans. Did you know that the risk of stroke in African Americans is TWICE as high as in white Americans? Stroke is very important to me because I have close family members who have had strokes and they are stroke survivors. One family member is very close to me.  She is doing very well and has educated me about how she has adapted to everyday living while being a stroke survivor!&lt;br /&gt;&lt;br /&gt;The Ad Council and American Stroke Association have released this Public Service Announement to raise awareness and help save lives in our community. I'm sure some of us ate a little bit too much in some areas.&lt;br /&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Yet do not be discouraged! I am showing you some photos and then later with a recipe from my family's Christmas &amp;amp; Holiday meals. As always, we prepared our foods in a very healthy method (eliminating extra sodium and adding healthy substitutes) and ate in healthy portions (not oversized or big portions). Dijon mustard&lt;br /&gt;1/2 tsp. kosher salt&lt;br /&gt;1/2 tsp. freshly ground black pepper&lt;br /&gt;Ingredients for Turkey&lt;br /&gt;15-16 lb. turkey&lt;br /&gt;1 large onion, coarsely chopped&lt;br /&gt;2 celery stalks, coarsely chopped&lt;br /&gt;2 sprigs fresh thyme &lt;/p&gt;&lt;br /&gt;&lt;p&gt;Instructions&lt;br /&gt;&lt;/p&gt;&lt;br /&gt;&lt;ol&gt;&lt;br /&gt;&lt;li&gt;Position oven rack in bottom third of oven and preheat to 350F. &lt;/li&gt;&lt;br /&gt;&lt;li&gt;Place shallots, garlic and thyme sprigs in a small ovenproof baking dish and drizzle with olive oil. &lt;/li&gt;&lt;br /&gt;&lt;li&gt;Cover dish with foil and bake until shallots are very tendor but not brown, about one hour. Of course with any challenge, initially you think to yourself -- &lt;em&gt;How Am I Going to Do This?&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Yet as each day and month went by, I didn't think about it near as much primarily because I developed a regimen that fit my lifestyle and comfortable to me. That's the reason why I am glad that I stayed focused on the four major elements of the NBCD regimen:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;Body Image&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Food Selection&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Food Preparation&lt;/li&gt;&lt;br /&gt;&lt;li&gt;Exercise and Physical Fitness&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;Over these past 6 months, perhaps the most interesting aspect was the fact that my schedule changed constantly throughout this time period. From the winter month of February to the early spring months of March, April and May and then to the summer months of June and July, the choices of food, preparation and exercise &amp; physical fitness regimen had to change in accordance with the weather and my change of schedule. &lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;Yet the biggest test was -- how do I feel about my health now and am I happy with how I look? You have to check out their line of new products particularly&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Ginger Garlic Stir Fry with Chicken  -  4g fat - only 290 calories&lt;/li&gt;&lt;li&gt;Glazed Chicken - 3.5g fat - only 220 calories&lt;/li&gt;&lt;li&gt;Chicken Carbonara - 7g fat - only 270 calories&lt;/li&gt;&lt;li&gt;Deep Dish Three Meat Pizza - 9g fat - only 350 calories&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Additionally, these Stouffer's Lean Cuisines were on special at the grocery store -- 5 for $10.00. With all the activities going on this month, it's amazing how easy it is to stay on this fitness challenge. I really do not have to think about the major areas anymore (body image, food selection, food preparation &amp;amp; physical fitness/exercise) because it is AUTOMATIC!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;For example, my family and I had a festive event at our house and we served everyone with healthier versions of the foods that they liked. Healthy versions of pizza and snacks for the kids as well as low-sodium hot dogs and turkey burgers. The kids and adults loved them!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;The next day, I got up early and went through my intense football workout! Yes, it is still high volume with much intensity from the start to the finish!! Again, I amaze myself that once I get into the workout, it goes so fast and my intensity through each drill is high! Of course, I have those moment when I'm thinking -- "why don't I just take it easy" -- yet before you know it that thought goes away and I'm back sprinting through the drill!!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Finally, later in the morning, here I am relaxing at the pool! As you know, this Weight Loss Challenge focuses on four major areas:  Body Image, Food Selection, Food Preparation and Exercise/Physical Fitness.&lt;br /&gt;&lt;br /&gt;Well, during this past month, I concentrated on two areas in particular --&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Working on My ABS&lt;/li&gt;&lt;li&gt;Finding New Healthy Foods&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Now that I have started and continued my Billy Blanks AB workouts, my stomach area REALLY feels and is beginning to look different. My major goal in concentrating in my stomach area is for toning as well as to loose some of those extra inches around my belly. Believe me, this is a very difficult area to loose this inches particularly for guys! Interestingly, for guys, it seems like it is ok to have several extra inches in your stomach area and to actually have a gut!! Well, that's not me and this is an area that I have always wanted to get control of! With the help of the specific workouts, I feel much more CONFIDENT that I can complete this intense training for my ABS but now I FEEL THE TIGHTNESS IN MY BELLY AREA!! THAT MAKES ME FEEL MORE MUSCULAR AND TONED!!&lt;/p&gt;&lt;p&gt;As for finding new healthy foods with regards to food selection, I realize that I have more of an appetite particularly after working out. So therefore, I had to find a healthy "SNACK" in between my major meals of the day. The snack that I have found is called:&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;strong&gt;BRUSCHETTA VEGETABLE CRACKERS&lt;/strong&gt; &lt;/li&gt;&lt;/ul&gt;&lt;p&gt;These vegetable crackers are great tasting, all-natural, crunchy snacks. The are all natural made with no genetically engineered ingredients, made with organic wheat flour, no hydrogenated oils and it is LOW FAT!!  And most importantly to me at this phase of the Weight Loss Challenge, these crackers taste  GOOD!!! Yes, they taste very good and they feel me up between my meals.  Now that I have added these crackers to my food selection, I noticed that there are now other companies that are producing more VEGETABLE-BASED CRACKERS!! This is a good thing for all of us, particularly when it's hard to eat healthy in between our healthy meals!!&lt;/p&gt;&lt;p&gt;So hang in there and I am doing the same!! It's not easy because its Spring time and there are so many events and cerermonies to attend and everyone wants to serve food at every event. I am continuing to be very selective in the foods that I eat at these events. I can't believe one month has passed already and I have been following my weight loss requirements. Specifically, I have adhered to:&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;&lt;strong&gt;Body Image&lt;/strong&gt; -- I have started on concentrating specific exercising on my trouble areas primarily my waist and upper body. My goal is to improve these areas. I do not have a requirement of inches. As long as I have recognized these areas and NOW taking action to gradually improve these areas that's why I feel that I can improve my body image in these specific areas.&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;p&gt;&lt;/p&gt;&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;&lt;strong&gt;Food Selection&lt;/strong&gt; -- I have continued to eat more of my favorite fruits and vegetables. I regularly eat apples, bananas, grapes and oranges! I also have eaten more salads primarily all types of salads with some pasta! I am also reducing my food portions slightly so that I do not come close to overeating a particular meal.&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;p&gt;&lt;/p&gt;&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;&lt;strong&gt;Food Preparation&lt;/strong&gt; -- I have continued to bake, grill and steam my foods. The use of Mrs. Dash to season my vegetables and meats add the type of flavor that I like.&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;p&gt;&lt;/p&gt;&lt;br /&gt;&lt;ul&gt;&lt;br /&gt;&lt;li&gt;&lt;strong&gt;Exercise &amp;amp; Physical Fitness&lt;/strong&gt; -- I have changed my regular weekly exercise regimens. I work out on Tuesdays, Thursdays and Sundays. On Tuesdays, I do my Billy Blanks Fat Blasting tape (60 mins) and then get on the stationary bike for 10 minutes. That's it. On Thursdays, I do my Billy Blakes AB workout (30 mins), lift my barbell weights (specific reps for my arms - curls and military press), then stationary bike for 10 minutes. That's it! On Sundays, it's the COMPLETE INTENSE WORKOUT when I go to county park and do my workout outside on the field. Here I stretch, jog two laps around the complex, go through agility exercises (backpeddaling, rotate hip drill, and running technique), then I do my offense and defense plays -- AT FULL GAME SPEED!! THIS IS WHERE I AM AT MY MOST INTENSITY AND HYPE!! I VISUALIZE MYSELF PLAYING IN A FOOTBALL GAME AND IT'S REALLY FUN!! As I shared with you in the previous blog update, I will be going through the 2007 New Black Cultural Diet Weight Loss Challenge with you as I continue to improve my health and fitness throughout 2007.&lt;br /&gt;&lt;br /&gt;I told you that I am serious about this so here I come with it! This challenge focuses upon body image, food selections, food preparation and exercise and physical fitness:&lt;br /&gt;&lt;br /&gt;Here are my current issues that I am working on:&lt;br /&gt;&lt;br /&gt;A. &lt;strong&gt;BODY IMAGE&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;My body measurements are: 38 inches - Chest&lt;br /&gt;34 inches - Waist&lt;br /&gt;36 inches - Hips&lt;br /&gt;&lt;br /&gt;I will be trying to improve my body in the area of my waist. Specifically, I would like to lose a couple of inches in my waist so that's why I have incorporated new exercises in this area that I will explain later. As of the 1st of February, my focused exercises have been challenging yet I am continuing to learn these new exercises for my waist area.&lt;br /&gt;&lt;br /&gt;B. &lt;strong&gt;FOOD SELECTION&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;I have been eating more of my favorite fruits (apples and bananas), whole grain Raisin Brand (Kelloggs) cereal and baked/grilled chicken. Even with the holiday of Valentine's day, I avoided majority of the treats. I ate my regular 3 meals a day for the past couple of weeks and treated myself with lite Mochas from my favorite coffee house! (Starbucks).&lt;br /&gt;Finally, I am drinking plenty of water each day! I keep a bottled water with me all day long and particularly in the mornings and evenings! It makes me feel refreshed and helps to cleans out any extra additives from my meals. Water is a life savior!!&lt;br /&gt;&lt;br /&gt;C&lt;strong&gt;. FOOD PREPARATION&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;I have continued with my regimen of baking and grilling lightly my meats (chicken -- skin always removed-- and fish). My salads are prepared using Mrs. Dash* seasonings and lite olive oils.&lt;br /&gt;&lt;br /&gt;D. &lt;strong&gt;EXERCISE AND PHYSICAL FITNESS&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;I have continued with my regular exericse/physical fitness regimen which includes 2 days a week working out to Billy Blanks Bootcamp -- Fat Blaster AND my weekend intense work-out of running and football drills (It's the highlight of my week because it's just like I'm training for a regular season game or practice -- Yeah, I get very hyped during my weekend workout!).&lt;br /&gt;&lt;br /&gt;Now, I have added my new focused-exercise for my waist! It is called Billy Blanks -- "AB BootCamp." This is exactly what I needed -- concentrated exercises for my belly!
