There is nothing that beats the rich and thick flavor of a good peanut sauce. It’s one of the most quintessential elements in traditional Thai cuisine and I will take just about any reason to drizzle, dip, or marinate with it! This Thai Peanut Chicken recipe is simple to make and requires nothing more than whisking a few ingredients together! We love to let it marinade throughout the day to really bring out the sweet nuttiness! But it’s nice that it really only requires one hour to marinade. Give it a try the next time you’re itching for an easy asian delight!

Thai Peanut Chicken:

• 2 lbs boneless chicken thighs, cubed
• 1/2 cup creamy peanut butter
• 1 cup full-fat coconut milk, canned
• 2 TBSP fresh lime juice
• 2 TBSP soy sauce or fish sauce
• 1 TBSP brown sugar, packed
• 1/2 tsp ground ginger
• 3 cloves garlic, minced
• 1/2 tsp crushed red pepper

For Serving:

• Rice
• Cilantro
• Chopped peanuts
• Lime wedges

Add peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes into a medium bowl and whisk until ingredients are well combined.

Transfer 1 cup of prepared sauce into a small bowl and cover. Chill in the fridge until you are ready to serve.Place the chicken pieces in a baking dish and cover with the remaining peanut sauce. Toss to coat well. Cover and refrigerate for 1-8 hours. Toss the chicken again halfway through marinating process.

Thread the marinated chicken pieces onto skewers and place on a lightly greased baking sheet. Slide onto the top rack of the oven and broil on high for 6 minutes or until cooked through.While chicken cooks, remove the sauce from the fridge and bring to room temperature. Remove the cooked chicken from the oven and place the chicken over a bed of rice,  Add peanut sauce and desired garnish.  Enjoy!

Whether you’re a baking enthusiast or simply crave a tangy treat, lemon curd is your new best friend. Get ready to learn how to whip up a batch of homemade lemon curd that’s guaranteed to become a fridge staple. So, grab your whisks and get ready to experience the delightful tang of homemade lemon curd!

Lemon Curd:

• 1 cup + 2 TBSP sugar
• 1 TBSO corn starch
• 1 cup fresh lemon juice (about 5 lemons)
• 3 eggs
• 2 TBSP unsalted butter
• 1 tsp grated lemon zest

Add the sugar, salt, and cornstarch to a saucepan. Whisk in the lemon juice and egg. Bring to a boil over medium heat, stirring constantly.

Reduce heat, bringing it to a simmer for one minute or until it thickens, continue to stir constantly.

Remove from heat. Add butter and grated lemon peal. Gently stir until butter melts. Spoon into a container fo your choice. I like using mini mason jars. 

Cover and chill for at least 6 hours. Enjoy! Can be stored in refrigerator up to 1 month or freeze.

Today, we’re venturing beyond the realm of marinara and mozzarella to explore the beauty of the blanca pizza, also known as white pizza. This stunning Italian staple celebrates the simple elegance of fresh ingredients.

Unlike its red-sauced counterpart, blanca pizza puts the spotlight on the creamy richness of cheeses like mozzarella or ricotta. Often adorned with fresh seasonal greens, this pizza is a symphony of textures and flavors.

Whether you’re a seasoned pizzaiolo or a home cook looking to impress, this blog post will be your guide to mastering the art of blanca pizza. Blanca Pizza:

• 2 TBSP olive oil, garlic infused
• 16 oz fresh pizza dough
• 2 cup whole milk mozzarella

• 1/8 tsp red pepper flakes
• 1/4 tsp salt
• handful of fresh greens (sage, arugula, basil or parsley)

Pizza Dough

• 3 cups warm water
• 1 TBSP sugar
• 1 1/4 TBSP yeast (or 3 packets)
• 1 TBSP salt
• 6 cups unbleached flour (I recommend the brand King Author)
• olive oil

Pizza crust is like creating a great work of art! It’s less about what ingredients are used, and more about how the ingredients are used that really makes a difference! There are a few rules, that when adhered to, result in a pizza crust that is truly out of this world! Combine warm water, sugar, and yeast in large bowl. Let stand for 15 minutes or until it begins to foam. Add salt and stir. Add 4 cups of flour and stir with a wooden spoon. Continue adding about 1 1/2 cups of flour until you are unable to stir anymore. Place dough on a lightly floured surface and knead for about 8 minutes. (Keep gradually adding flour as needed.) Divide dough in half and add to separate bowls that are coated with olive oil.  Cover and let rise for 1 hour or until it has doubled in size.

After your dough has risen, punch the dough and place in the fridge overnight. (Or even up to two days! This allows yeast fermentation, which is essential to make the pizza tasty.) When you are ready to use your dough, remove it from the refrigerator and allow it to warm to room temperature. When shaping your pizza, I recommend you pull and stretch rather than roll out the dough.

Brush the dough with your infused olive oil, add mozzarella, a few spoonfulls of ricotta or goat cheese, and sprinkle with grated pomano or parmesan. Sprinkle with pepper flakes, salt, garlic cloves (if desired.) Finish off with fresh herbs. You can add herbs before or after the baking process, based on your preference. Bake on the top rack at 450 for 12 minutes. Enjoy!

Today, we’re ditching the straw and diving spoon-first into a homemade ice cream recipe that captures the essence of the iconic Pink Drink!

This recipe goes beyond a simple flavor copy. We’ll be crafting a vibrant, creamy ice cream that bursts with the familiar taste of strawberries and coconut. Say goodbye to melted milkshakes and hello to a delightful frozen treat that’s perfect for beating the heat. Grab your Ninja Creami and get ready to whip up a scoop (or two) of pure summery bliss!

Pink Drink Ice Cream:

There is no dish cozier than big bowl of steaming Pho. There’s nothing like the feeling of a rich and flavorful broth just warming your soul. This feels like the kind of dish that is too complicated or time-consuming to prepare at home, but this recipe will yield four servings of delicious, flavorsome soup in no time! Cooking the meet in the soup produces the most tender bite and being able to customize it with all my favorite herbs is just the cherry on top. Or should I say the cilantro on top? Give this recipe a try the next time you’re itching for a quick comfort meal!

Quick Beef Pho:

Broth: 

• 4 TBSP “Better than Bouillon: Beef”
• 2 TBSP fish sauce
• 2 TBSP sugar
• 2- slices of fresh ginger, 2″
• 1 yellow onion
• kosher salt, to taste
• 2 whole star anise
• 1 cinnamon stick
• 4 whole cloves
• Stainless Steel Spice Infuser

Ingredients:

• 1/2 lbs thin rice noodles
• 1/2 lbs round eye steak, thinly sliced
• 1 cup thai basil leaves
• 1 cup bean sprouts
• 1/2 cup cilantro leaves
• 3 jalapeños, sliced
• 4 scallions, chopped
• 1/2 onion, sliced 
• 1 lime, cut in quarters
• hoisin sauce
• sriracha

For the stock: Add the beef base (Better than Bouillon) and 8 cups of water to a saucepan and bring to a boil. Add fish sauce, sugar, ginger, onion and salt to the stock and reduce heat to a simmer.  Using a spice infuser, add the cinnamon, star anise, and cloves to the broth and let simmer for 30 minutes.

After 30 minutes, test the broth to see if the spice flavors have been incorporated into the broth. When seasoned to your liking, remove the spice infuser.

Now is the time to start assembling your pho! Bring the broth back to a simmer. In a separate pot, bring water to a bowl. Using a metal strainer or basket, quick dip the noddles into water until they are hot and al dente. This should take about a minute. Drain any excess water from the noddles and divide them into four bowls.

Add all other ingredients to a serving plate. Each person can top their bowl with raw slice beef (it will cook in the broth), basil, bean sprouts, cilantro, jalapeño, scallions, and/or onion. Ladle enough broth to cover the ingredients in your bowl and garnish with a wedge of lime. Serve with Hoisin sauce and Sriracha.  Enjoy!

Baked Salmon with Greek Salsa:

• 1 lb salmon
• 3 TBSP olive oil
• 2 small roma tomatoes, diced
• 1/2 cup cucumber, peeled and chopped
• 1/3 cup red onion, chopped
• 1/3 cup of olives, sliced
• 2 garlic cloves, minced
• 1 medium avocado, diced
• 1/2 cup feta cheese, crumbled
• 2 TBSP fresh lemon juice
• 3 TBSP fresh parsley, finely chopped 
• 1 TBSP fresh oregano, finely chopped
• salt and pepper, to taste

Preheat the oven to 400 degrees. Add salmon to foil, drizzle with olive oil, a squeeze of fresh lemon, and season with salt and pepper. Seal the foil and cook for 20-25 minutes.

In a medium bowl, toss together the diced tomatoes, cucumber, red onions, olives, garlic, avocado, feta, lemon juice, 2 TBSP of olive oil, parsley, and oregano. Season with salt to taste.

When the salmon is done cooking, top with salsa and enjoy!

If you’re a lover of simplicity in your bakes goods, this one’s for you! This recipe requires just seven ingredients and yields the softest shortbread cookies ever. Eating these always makes me feel like I’m having my very own tea time. There’s something so classic and regal about shortbread. You can also purchase just one extra item to add a little flair to this recipe with the candy melts. This adds an extra dose of sweetness that I personally love! Recipe from Beyond Frosting.

Cranberry Almond Shortbread:

• 1 cup butter, room temperature
• 3/4 cup sugar
• 1/4 tsp salt
• 2 cups flour
• 1/2 cup almonds, chopped
• 1 tsp almond extract
• 2/3 cup dried cranberries, finely chopped
• 6 oz of candy melts, white (optional)

In a mixer, combine butter, sugar, almond extract, and salt. Beat until light, fluffy and well combined, scraping the sides as needed.

Gradually add the flour at a low speed until the. dough is crumbly. Add cranberries and almonds and mix at a medium-high speed until the dough sticks together.  

Turn the dough onto parchment paper and dive into 2 logs, about 1.5 inches thick and 6-7 inch long. Refrigerate for 1-2 hours.

Preheat the oven to 375. Unwrap the dough logs and cut them into 1/4 inch thick slices/ Bake for 9-10 minutes or until the edges begin to brown. Let cool on wire rack.

To dip the cookies,  pop the candy melts in the microwave at 30 second intervals. Warm until melted and smooth.  Dip one side of the cookie into the melt and gently tap to remove any excess.  Place on parchment paper to set. Enjoy!
