<p>Well hello my friends!</p>



<p><strong>Summer is officially here.</strong> Yay!  The other day my six year old asked if we could have a &#8220;pic-mic&#8221; in the backyard.  He&#8217;s the sweetest little boy on the planet, so we brought a blanket outside and had a picnic!</p>

<p>I went to <a href="https://www.costco.com/"><strong><span style="text-decoration: underline;">Costco</span></strong></a> yesterday and <a href="https://www.vitalproteins.com/"><strong><span style="text-decoration: underline;">Vital Proteins Collagen Peptides</span></strong></a> are on sale.  Woot!</p>

<p>Right now a <strong>24 oz container is $23.99. </strong> That same size container <a href="https://amzn.to/3g8oQMs"><strong><span style="text-decoration: underline;">goes for about $45 on Amazon!</span></strong></a> Crazy.</p>



<p>Apparently, Collagen is<strong> good for your hair, skin, nails, bones, joints, ligaments and muscle recovery. </strong> It&#8217;s hard to tell if it&#8217;s really helping me in those areas, but I&#8217;d like to believe it is!  If nothing else, it&#8217;s <strong>20 grams of protein per serving, </strong>which is great.</p>



<p>Most people struggle to get enough protein in their diets, so collagen peptides is an easy way to get some in!</p>

<p>I love picking up a <strong>rotisserie chicken. </strong> They are only $5 and they&#8217;re huge!  I take all of the chicken off the bone and just put it in a container in the fridge.  It&#8217;s a perfect easy and yummy protein snack.  My 17 year old son and my husband and I are the ones who particularly enjoy it!</p>



<p>If we haven&#8217;t used it up after 4-5 days, I put it in a freezer bag and throw it in the freezer.  It&#8217;s so nice to have on hand for soup, enchiladas and casserole recipes.</p>



<p>My kids love those<strong> little cans of Pringles,</strong> of course.  They&#8217;re obviously not healthy, but it&#8217;s so nice to have an easy snack for the kids to grab.  I enjoy healthy living, but I&#8217;m also a fan of easy, practical, yummy living as well. Ha ha.  It&#8217;s tough to keep all of these kids fed and happy!</p>



<p>I also really love that <strong>riced cauliflower.</strong> It&#8217;s actually my new favorite thing to add to my protein shakes.  I know, I&#8217;m weird.  I love experimenting with my protein shakes and I&#8217;m always trying to see how many awesome things I can add to my shake and still keep it palatable.  Ha.</p>

<p>Um, <a href="https://www.hersheyland.com/barkthins"><strong><span style="text-decoration: underline;">I love Bark Thins!</span></strong></a>  They are my favorite thing.  When I&#8217;m craving a little somethin&#8217; somethin&#8217;, they always fit the bill.  They are super yummy, satisfying and a small piece or two is all I usually need.</p>



<p>I love to add those <a href="https://www.earthboundfarm.com/"><strong><span style="text-decoration: underline;">power greens</span></strong>,</a> <a href="https://josiesorganics.com/salads/spring-mix/"><strong><span style="text-decoration: underline;">Josie&#8217;s Organics Spring mix</span></strong></a> (the best!), the <strong>cucumbers </strong>and <strong>tomatoes </strong>to my shakes as well.  I also enjoy all of those things as a quick salad on occasion as well.  They are all so yummy and fresh!</p>



<p>Oh and FYI,<strong> those power greens freeze really well. </strong> I keep a few bags in the freezer and then just put some in my shakes as I need some.  It&#8217;s great!  I haven&#8217;t tried freezing the spring mix, but maybe I should experiment with that???</p>

<p>I also thought I&#8217;d share a <strong>quick, yummy dinner</strong> I made the other night!  It was for <a href="https://www.melskitchencafe.com/chicken-curry-in-a-hurry/"><strong><span style="text-decoration: underline;">&#8220;Chicken Curry in a Hurry&#8221; from Mel&#8217;s Kitchen Cafe</span></strong></a> (I love her site and make a ton of her recipes!)</p>

<p>It was a really easy and healthy recipe and I really enjoyed it!  My kids didn&#8217;t love love it, but at least they ate it!  We all enjoyed the leftovers for a couple days too.</p>



<p>I cooked up some <strong>broccoli </strong>and <a href="https://www.ling-ling.com/products/chicken-and-vegetable-potstickers"><strong><span style="text-decoration: underline;">some potstickers</span></strong></a> (from Costco) on the side.  My kids LOVE those potstickers, so if I make them with a meal that they don&#8217;t particularly love, they usually don&#8217;t complain as much, lol.</p>



<p>I also just cooked up some<strong> jasmine rice</strong> in my rice cooker to go with it.  Super yummy!</p>

<p>Well holy cow folks,<strong> I&#8217;m sorry I&#8217;ve neglected this blog for so long!</strong></p>



<p>I love all of you, I love health and fitness, I love this little space on the internet where I can share my thoughts and life, but lately <strong>my life has just needed a little more of me in it. </strong> It&#8217;s required more of my time, so this little blog has had to take a back seat.</p>



<p>Dang it.</p>



<p>But, here I am!  I hope you are all doing well and are happy and healthy.</p>

<p>Although I haven&#8217;t been updating this blog, I&#8217;ve still been doing a live weekly workout on my <a href="https://www.facebook.com/happybeinghealthymel"><strong><span style="text-decoration: underline;">Happy Being Healthy Facebook page!</span></strong></a></p>



<p>I do one every Thursday morning at 9:00 AM Mountain Time.</p>

<p><strong>IMO, strength training and HIIT (high intensity interval training) are where it&#8217;s at,</strong> so those are the types of workouts I do on my page.</p>



<p>I believe <strong>you get the most bang for your buck with HIIT.</strong>  It&#8217;s super efficient, effective and fun!  I also believe if you really want to transform your body, tone up, build muscle and lose weight, then<strong> LIFT THOSE WEIGHTS! </strong> Really!!  Strength training is the fountain of youth.</p>

<p>I also just wanna say somethin&#8217; about exercise.  If you want to truly live a healthy lifestyle and stick to a regular exercise regime, then <strong>find something you actually enjoy doing</strong>.</p>



<p>I really <em>enjoy </em>lifting weights.  It just feels empowering and I know it blesses my body.  It strengthens my bones, ligaments, muscles and mind!  It makes me feel good and it makes me happy!</p>



<p>HIIT training incorporates strength training, but also includes cardio.  It&#8217;s a lot of fun and I look forward to it!</p>



<p><strong>Sooooooo, just find ways to move your body more and enjoy what you do</strong>.</p>



<p>You don&#8217;t have to exercise for hours and hours.  You don&#8217;t have to kill yourself off. <strong> You just have to be consistent and move that body!</strong></p>

<p>In fact, <strong>one of my new favorite things this year is going on walks.</strong> Who knew???  Seriously, I never went on walks before.  I&#8217;m sorry to say that I used to think walks were a waste of time.  I thought they just took too much time and were just too slow.</p>



<p>Well I&#8217;ve since learned that the &#8220;slowness&#8221; of walks is just what I love!  It allows me to slow down a bit (go figure), breathe, really think, soak up the beauty all around me and just enjoy &#8220;being&#8221; and &#8220;living!&#8221;  It&#8217;s wonderful.</p>



<p>I&#8217;ve gotten to the point where I crave a nice walk.</p>



<p><strong>It clears my mind, opens my heart, improves my mood and is just awesome.</strong>  I also gotta say that I don&#8217;t really go on my walks for the exercise benefits first and foremost.  I actually go on them more for my mental and emotional health and just because they make me happy and make me feel good.  But, I&#8217;m here to say those walks have helped me to lose some weight too. </p>



<p>Yee haw!</p>



<p>It&#8217;s awesome because weight loss and physical health is just a side benefit from doing something I love that makes me happy.  These are the types of things that make living a healthy lifestyle so much easier!</p>



<p><strong>Just find what you LOVE to do and then make it a part of your life!</strong></p>

<p>This picture doesn&#8217;t do it justice, but <strong>this beautiful little farm is behind the sweetest, most peaceful cemetery.</strong>  I actually enjoy walking around the cemetery.  There is such a peaceful spirit there and I can feel so much love.  It&#8217;s incredible.  </p>

<p>I also enjoy walking along this <strong>quiet canal trail </strong>near my home&#8230;.</p>

<p>Oh my goodness!  I&#8217;ve said this a million times and I&#8217;ll probably say it a million more, but<strong> I am not a fan of watching my kiddos grow up! </strong> It really aches my momma heart.  I&#8217;m also not a fan of knowing my last little baby will be done with kindergarten.</p>



<p>There&#8217;s something about having a kindergartener that made me still feel like a young mom.  Sorta. kinda.  But, I guess I gotta accept the fact that I&#8217;m not such a young momma anymore!  Sniff, sniff.</p>



<p><strong>Life keeps marching on!</strong>  I do try to appreciate all of the stages of life, but I am also a giant sentimental sap.</p>



<p>I also gotta share this bulletin board that I saw at my kid&#8217;s elementary school that I really liked.  I thought it was a <strong>wonderful message!</strong></p>

<p>Well hello my friends!  <strong>I am ALIVE!</strong></p>



<p>We&#8217;ve had a crazy and interesting last couple of months.</p>



<p>In January <strong>a couple of my kiddos and I got COVID!</strong>  It was kind of crazy and a little surreal to realize we had<strong> THEE Covid,</strong> like the cause of this pandemic and a lot of the craziness in the world.  I kind of felt like a ticking time bomb because I had no idea what kind of effect it would have on me!</p>



<p>Thankfully we all made it through and it wasn&#8217;t too bad.  However, it lingered on in me for like a month!  I just felt very worn down and blah and it was frustrating!  I&#8217;m fine though.</p>



<p>I will do a separate post all about our experience with Covid later.  Several members of my extended family got it too.  They&#8217;re really the only people we socialize with right now, so it was interesting how quickly it swept through my family!</p>

<p>We&#8217;ve also had a bunch of things going on &#8217;round here!  Ya know, as a mother of many and as a lady who&#8217;s a bit of a busy body, <strong>I struggle to get all the things done that I&#8217;d like to get done!</strong></p>



<p>Hence, this blog being neglected for so long!  Gah!</p>



<p>However, I&#8217;ve been doin&#8217; some deep thinkin&#8217; and I think I need to do a better job of actually <strong>scheduling my life</strong> and being a little<strong> more deliberate with how I spend my time!</strong></p>



<p>There are a LOT of things I would like to do and get done that I&#8217;m just not getting done!  Also, my kiddos just keep getting bigger and bigger, which makes me sad, but I&#8217;m also starting to find myself with a little more time, WHICH IS AWESOME!</p>



<p>Sadly, I&#8217;m still not spending that time as wisely as I would like.  BUT, since I&#8217;m starting to have a little more time FOR ME, I really want to start getting some of the things done that I&#8217;ve been wanting to get done for a looooooong time now!</p>



<p>Some of the things I would love to do are:</p>



<ul class="wp-block-list"><li>Be a more consistent and deliberate blogger</li><li>Put a bunch of my workout videos on <a href="https://www.youtube.com/channel/UC9QffBuEYj2KN0A0GWHVbTA"><strong><span style="text-decoration: underline;">my YouTube channel</span></strong></a></li><li>Make and post more videos to <a href="https://www.youtube.com/channel/UC9QffBuEYj2KN0A0GWHVbTA"><strong><span style="text-decoration: underline;">YouTube</span></strong></a></li><li>Paint several rooms in my house</li><li>Organize all of our photos and videos</li><li>Deep clean and organize my entire house!</li><li>Read more books</li></ul>



<p>Life is amazing and time is precious, so I really want to cherish and make the most of every day!</p>

<p>I always think braces makes them look so big!  This same baby of mine is going to be a TEENAGER in a couple of weeks!  Whaaaaaat?????</p>



<p>I really really really am not a fan of watching my kids grow up.  I know I whine and complain about this all the time, but it&#8217;s a REAL THING for me!  It just aches this momma heart of mine.</p>

<p>I don&#8217;t feel any older, so how can I be the mother of so many old kids, huh???  Sniff, sniff.</p>



<p>Speakin&#8217; of getting older, I also had a birthday a few weeks ago!  <strong>I am now 45! </strong> FORTY FIVE!  What in the world???  I feel like I graduated high school like 10 years ago.</p>



<p>I had a nice birthday.  I got some <strong>beautiful flowers</strong> from my husband, kids and a friend&#8230;.</p>

<p>We went to <strong><span style="text-decoration: underline;"><a href="https://www.loscucos.com/">Los Cucos Mexican Cafe</a> </span></strong>and it was really good!</p>



<p>Oh, and my son&#8217;s friend came with us too, in case you&#8217;re wondering who the extra kid is, lol.  I am surrounded by SO MANY boys these days!</p>



<p><a href="https://happybeinghealthy.com/my-daughter-left-the-nest-good-food-beautiful-runs/" data-type="post" data-id="20722"><strong>My one and only daughter is currently serving a mission</strong></a> for our church in Portland, Oregon.  She gets home in about six months. YAY!</p>



<p>I sure miss her and<strong> it&#8217;s super weird to be the only girl &#8217;round here.</strong>  Even my dog is a boy!  Ha ha.  You wouldn&#8217;t think it would be that weird, but it is!  I sure love and am so thankful for ALLLLLLL of my boys though!</p>



<p>I also<strong> went to lunch</strong> for my birthday with mom, sister and niece. </p>

<p>It was so nice to go out with them and to be with some girls, ha ha.  Seriously though, throughout this pandemic these peeps have really been the main people we see and hang out with, other than those that live in our house!  I sure love them so much!</p>



<p>My sister also got me <strong>the sweetest present</strong> that I thought I would share with y&#8217;all.</p>

<p>Isn&#8217;t that fun and so nice!??  Yes, I have loved everything she got me!</p>



<p>It was a really fun birthday!</p>



<p>I also recently <strong>helped my two boys make their Valentine boxes</strong> for school.  I gotta say that every year it&#8217;s a bit of a pain to make these, but I&#8217;m always grateful we get the opportunity to do it!  It&#8217;s makes us have to sit down together, be creative and make a craft.  I&#8217;m grateful.</p>



<p>My 5th grader wanted to make a <strong>Rubix cube Valentine box</strong> this year.</p>

<p>He&#8217;s really been into Rubix Cubes lately.  Kev is a Rubix Cube pro and he always enjoyed playing with them when he was a kid, so he&#8217;s had fun teaching our 10 year old how to do it!</p>

<p>I was actually so happy he wanted to make a volcano one because he used to be obsessed with volcanos when he was littler!  He doesn&#8217;t talk about them much anymore, so I was happy he wanted to make one!</p>



<p>We just made a volcano out of paper mache, put a large plastic water bottle in the middle to give it shape (I cut the top off of the bottle) and then painted it!</p>



<p>It was pretty easy and he liked it.</p>

<p><strong>I&#8217;ve also still been enjoying going on walks!</strong>  I actually love them so much! The weather here in Utah has been so mild this winter and I&#8217;ve loved it!</p>

<p>I never would have thought I&#8217;d enjoy going on walks as much as I do!</p>



<p><strong>There&#8217;s just somethin&#8217; about being outside in the fresh open air, spending time deep thinking and moving my body that rejuvenates me in every way!</strong>  It makes me feel so grateful for so many things in life and it shifts my mind to an abundant mindset.  I love it so much!</p>



<p>That&#8217;s one of the good things that I&#8217;ve gained from this pandemic!  I started walking because there just weren&#8217;t a lot of things to do!</p>



<p>There are certainly blessings to be found in every situation.</p>

<p>I also gotta say that <strong>I restarted my New Year&#8217;s goals a couple of weeks ago! </strong> I was able to do them for about a week at the beginning of the year, but then we all got Covid, and it went downhill from there!</p>



<p>So, I decided to start them over.  <strong>I&#8217;m really just trying to be more mindful and elevate my healthy living.</strong>  I&#8217;m trying to be more deliberate with my choices.</p>



<p>So, these are the goals I&#8217;m working on&#8230;.</p>

<p>These goals are nothing earth shattering.  They are not overly complicated or complex.  <strong>AND, that is exactly why I love them!</strong></p>



<p>Seriously folks, if you want to improve your health and/or lose some weight&#8230;.come back to these basics!  They will bless your body, mind and soul every time!</p>



<p>Our society is so set on finding the &#8220;next best thing&#8221; or the new trend or the new diet.  That stuff is bunk!  Yes, a lot of times the latest diet will &#8220;work,&#8221; but more often than not it&#8217;s way too complicated, too strict and just not sustainable!</p>



<p><strong>I promise if you just focus on eating real food, eating less (within reason) and just loving and taking care of your body&#8230;..you will love it!</strong>  AND, it will last!  AND, it&#8217;s sustainable!</p>



<p>Consistency is key.  You do not need to do anything extreme and you don&#8217;t need to be miserable to be healthy and lose weight.  I promise!</p>

<p><strong>Well Happy 2021!!!</strong></p>



<p>Hallelujah, right??  Actually although 2020 was crazy, it was also a really <strong>good year of growth and learning for me</strong>.  I&#8217;m very grateful for that.</p>



<p>I&#8217;m just hoping that the whole world can normalize a bit in 2021!</p>



<p>We had a nice Christmas.  I was really grateful that this Christmas season wasn&#8217;t quite as hectic.  It was so nice to not just go, go, go the whole month of December.  <strong>I love the magic of Christmas</strong> and I&#8217;m so glad we got to enjoy it a little more with the simplicity of this year.</p>



<p>I really enjoyed just spending time at home, sitting by the Christmas tree and feeling the spirit of the season&#8230;.</p>

<p>Christmas is magaical!</p>



<p><strong>We were able to go up to Oregon to</strong> <strong>spend Christmas with Kev&#8217;s mom.</strong>  We hadn&#8217;t seen her in a long time, so it was so nice to be with her.  We were also able to spend some time with Kev&#8217;s brother and his family and it was wonderful to see them!</p>

<p><strong>We&#8217;re just missing our sweet daughter</strong> who is on a church mission in Portland, Oregon right now.  We were able to talk with her though and were even able to watch her open the presents we sent her!</p>



<p>Isn&#8217;t technology awesome!???  I&#8217;m so grateful to be able to see my daughter&#8217;s face when we talk with her.  What a blessing!</p>



<p>Well, although I love Christmas so much, I&#8217;m always a little glad when it&#8217;s over.  <strong>I&#8217;ve learned to really appreciate the &#8220;chill month&#8221; that January is, </strong>literally and figuratively.</p>



<p>It&#8217;s nice to slow down and I always love to refocus on my own life and the goals I have for myself.</p>



<p>I always strive to live a somewhat healthy lifestyle all of the time, but <strong>I really love to tighten things up in January.</strong>  It just feels like a nice reset mentally and physically.</p>



<p>I&#8217;ll share my specific health goals in a sec, but I thought I&#8217;d also share a few of my other goals.  2020 has been a year of deep thinking and reflecting for me and I&#8217;ve recognized<strong> some things I&#8217;d like to work on this coming year&#8230;</strong></p>



<ul class="wp-block-list"><li>Spend more time reading</li><li>Study my scriptures more</li><li>Use my time more wisely, cherish every day</li><li>Love more fully and purposefully</li><li>Get out of my comfort zone more!</li></ul>



<p><strong>I know life is all about living and learning! </strong> I don&#8217;t ever want to become complacent or stagnant.  I always want to be challenging myself and striving to improve myself!</p>



<p>So, as for my health goals&#8230;.I&#8217;m starting them tomorrow!  <strong>I have five specific goals that I will be working on for the next 30 days.</strong>  I&#8217;m going to really kick it up a notch and then I&#8217;ll tone it down just a bit after the 30 days are over.  But for the next 30 days, I&#8217;m going to:</p>

<p>This 30 day challenge is all about improving my physical health.  Sometimes I like to incorporate some emotional health goals too, but for the next 30 days <strong>I&#8217;m really just going to commit to these physical health goals!</strong></p>

<p>I purposefully kept this challenge very simple so that you can make it your own!  Don&#8217;t overthink it.</p>



<p><strong>You decide what &#8220;real&#8221; food is for you.</strong>  I don&#8217;t think I need to spell out what junk food is. I&#8217;m just going to make an effort to eat more whole foods, specifically a lot more fruits and vegetables.</p>



<p><strong>I&#8217;m going to stay away from obvious forms of sugar. </strong> I&#8217;m not going to obsess and read every label.  I&#8217;m just going to stay away from candy, soda, cake, cookies, etc.  I know what things have a lot of refined sugar in them&#8230;.so I&#8217;m not going to eat those things!</p>



<p><strong>I think the water and sleep goals are pretty self explanatory.</strong></p>



<p>The exercise goal is also one that you can make your own!  We are all at different levels physically, so you do what works for you!</p>



<p>I would recommend exercising deliberately.  Don&#8217;t count things like cleaning the house, gardening, etc.  Although those are still good things, I would strive to actually exercise!  You should be deliberately exercising and should sweat and get your heart rate up.<strong>  I would also recommend strength training as your form of exercise at least 3 times a week.</strong></p>



<p>So there ya go.  Again, don&#8217;t overthink it!  <strong>I&#8217;m just going to take it one day at a time and do my best!</strong>  I know as I work on these goals, my physical health will improve and in return my emotional and mental health will improve as well and then my life will improve!</p>

<p>You guys!!  <strong>Wow, I haven&#8217;t blogged in a while. </strong></p>



<p>I gotta say though that sometimes life gets busy, my family needs me a little more, I get a little overwhlemed&#8230;..and somethin&#8217;s gotta give.</p>



<p>So, this past month <strong>this blog was the &#8220;somethin'&#8221; that had to give. </strong> It&#8217;s tough.  I am just one lady and it&#8217;s hard to do alllllll the things sometimes!</p>



<p>I must say that although this crazy year has been, well&#8230;&#8230;.crazy, <strong>I have learned so many life lessons!</strong>  I&#8217;m so grateful.  Some of the many lessons I&#8217;ve learned are:</p>



<ol class="wp-block-list"><li>Chill out.</li><li>Recognize that I can&#8217;t do everything, nor should I.</li><li>It&#8217;s perfectly fine the let things slide.  If the laundry isn&#8217;t done, the dishwasher isn&#8217;t changed and if the house is a little messy&#8230;..life will go on!</li><li>Spend less time &#8220;doing&#8221; and more time &#8220;being.&#8221;</li><li>Cut out the things in life that really don&#8217;t matter</li><li>Cut myself some slack</li><li>Take time to rest and rejuvenate my body and spirit</li><li>Do things I enjoy every single day</li><li>Identify my priorities and then make sure the top priorities come first</li><li>People are always the top priority.  The people I love really are the only thing that matters in the end.</li></ol>



<p>So, there ya go.  Those are some of my thoughts and some of the things I&#8217;ve learned.  <strong>It&#8217;s really been a blessing to me!</strong></p>



<p>This year I&#8217;ve learned that I really don&#8217;t need to <em>&#8220;go go go&#8221;</em> and <em>&#8220;do do do&#8221;</em> all the time!  In fact, life is much happier and I&#8217;m much healthier when I don&#8217;t!  </p>



<p>For some reason, I used to think I had to be productive all the time.  Now, if my kids need me, <strong>I try to be present for them.</strong>  If someone wants to talk,<strong> I listen.</strong>  If there is an opportunity to spend quality time with someone, <strong>I take it. </strong> If I recognize an opportunity to love someone, buoy them up or express gratitude&#8230;.<strong>I do it!</strong></p>



<p>It&#8217;s quite simple, really.</p>



<p>But, although I&#8217;ve been spending more time just living and loving, <strong>I also want to step up my game!  </strong>There are a lot of things I want to accomplish that I&#8217;m just not getting to!  </p>



<p>I know <strong>I haven&#8217;t been getting enough sleep lately. </strong> For some reason, that&#8217;s always been a struggle for me!  AND, when I&#8217;m tired, I&#8217;m not as productive, I&#8217;m not as cheerful and I just kind of slog through life instead of really LIVING!</p>



<p>I struggle ALL the time and I&#8217;m always learning and re-learning life lessons.  My ultimate goal is to take really good care of my physical health so that<strong> I have the energy to do all the things I really want to do that are important to me!</strong></p>

<p>With that being said,<strong> it&#8217;s been a busy month. </strong> First of all, it&#8217;s the Christmas season!  Yay!  I love this time of year!  It&#8217;s dang busy, but I love it anyway!</p>



<p>The Christmas season hasn&#8217;t been quite as busy this year though and it&#8217;s been nice.</p>



<p>We went up to my mom&#8217;s house last Sunday and <strong>made candy houses and reenacted the Nativity story&#8230;.</strong></p>

<p>We&#8217;ve done this tradition for many, many years now and I love it.  The kids are getting way too big though!  Sigh.</p>



<p>I&#8217;m grateful all the big kids were such great sports though and were still happy to participate! </p>



<p>Oh, and just <strong>look at my darling little 6 year old as the star!!!!</strong>  I&#8217;m so grateful to still have a little one.  He is just as sweet as can be.  He is so happy, kind and innocent all the time and I just adore him. <strong> I adore all of these sweet kids!</strong></p>



<p>My sister also had a birthday on Sunday and my oldest son&#8217;s birthday is on Christmas, so we sang to them&#8230;.</p>

<p><strong>Oh how grateful I am to have so many good people in my life!</strong>  I love them all so much!</p>



<p><strong>I can&#8217;t believe my biggest baby will be 22!!!!</strong>  What in the world???  Oh, and I was 22 years old when I had him!  Wow.  I will make sure to get a picture with him on his birthday!</p>

<p>That&#8217;s just never a phone call you want to receive.  Thankfully, he is fine and no one was hurt, but it&#8217;s so not fun!</p>



<p>And, it&#8217;s not cheap!  Sadly, we thought we had comprehensive insurance on this car, but lo and behold&#8230;.we didn&#8217;t!  Gah!  I think that might have been my fault.</p>



<p>So, this fix has been very $$$$.</p>



<p>Oh, and last Christmas time we spent over $4,000 fixing the main water line to our house!  Super fun!</p>



<p>Kev called that our <strong>&#8220;Christmas pipe&#8221;</strong> and so now we&#8217;re calling the wrecked car, the <strong>&#8220;Christmas car.&#8221;</strong></p>



<p>Super fun.  Such is life.</p>



<p>Oh, and since my 17 year doesn&#8217;t have a car right now, <strong>I&#8217;ve been driving him to and from school and work.</strong></p>



<p>Strangely, I really don&#8217;t mind though!  I realize how quickly these kiddos grow up, so I&#8217;ve enjoyed spending the extra time with him!</p>

<p>Changing gears&#8230;.</p>



<p>Ya know, I gotta say that although living a healthy lifestyle is quite hard and time consuming, <strong>it is sure a blessing to me!</strong></p>



<p>I&#8217;m not perfect at it and I struggle all the time, but I recognize <strong>when I fill my body full of good, nutrient dense food, I feel good! </strong> Go figure.</p>



<p>I have more energy, my mood is better and life is easier.  A little sugar now and then helps too, lol.</p>



<p>I also realize that<strong> exercise is awesome! </strong> I love working my body and muscles.  I love getting those good endorphins flowin&#8217;!  When life is uncertain and the world all around us seems to be going to pot&#8230;..<strong>it feels good to sweat!</strong></p>



<p>Right now<strong> I&#8217;m teaching two exercise classes a week.  </strong>I teach an online class on Mondays with a bunch of my friends.  I&#8217;ve also been teaching a live class every Thursday morning at 9:00 (Mountain time) on my <a href="https://www.facebook.com/happybeinghealthymel"><strong><span style="text-decoration: underline;">Happy Being Healthy Facebook page!</span></strong></a></p>



<p>Join me if you want to!  I also leave all my workouts up on my page so you can do them any time!  I eventually want to get them all up on my YouTube channel as well.</p>



<p>In addition to those two classes I teach, <strong>I also try to make it to a couple classes at my gym each week.</strong>  I have three classes that I really enjoy, but most weeks I only make it to two. </p>

<p>In addition to my classes, I have also <strong>LOVED going on walks this year! </strong> What a blessing they have been to me!  I enjoy getting outside in the fresh air, moving my body, deep thinking, talking to myself and just soaking up the beauty all around me.  </p>

<p>My walks help to ground me, help me to feel grateful and help me to refocus on what is most important in life.</p>



<p>Even though it&#8217;s winter, I&#8217;ve still enjoyed going on walks when the weather allows.  It&#8217;s actually been quite cool to walk throughout all of the seasons.  It makes me grateful for each one!</p>

<p>Oh, I&#8217;ll randomly share the <strong>yummy Sunday dinner </strong>we had this week.</p>



<p>Kev smoked a turkey, which was to die for!  He also smoked the stuffing and some bread.  So dang good!  I made mashed potatoes and gravy and some green bean casserole.</p>

<p>Well amidst all of the craziness of this year, <strong>I&#8217;m looking forward to 2020 being over!</strong>  I&#8217;m sure we all are!  It&#8217;s definitely been a year of growth and learning for me, and for that I am grateful!</p>



<p><strong>I&#8217;m just hoping that 2021 can be a little less stressful and I little more normal!</strong></p>



<p>I&#8217;m also looking forward to 2021 because I gotta <strong>get back to my good ol&#8217; healthy goals.</strong>  I&#8217;ve been slackin&#8217; on my sleep and eating a little too much food, especially sugar!</p>



<p>It&#8217;s been fun, but the party has to end.  Ha ha.</p>



<p>Sooooo,<strong> I&#8217;m going to organize a little healthy challenge. </strong> I will try to get it together soon and share it with all of you!  I&#8217;m not going to do a big Facebook group challenge like I did last year.  I am just going to organize a self-directed challenge!</p>



<p>It will be awesome, it will help you to feel better, it will help your body to thrive and it will help you lose weight if you want to!</p>



<p>I&#8217;m not a fan of extreme diets, but <strong>I am a fan of stepping it up and holding yourself accountable!</strong>  I&#8217;m also a fan of setting some good goals and then reaching them!</p>



<p><strong>Sooooo, get ready to hit it hard with me in 2021!</strong>  I will share the deets with y&#8217;all as soon as I get it together!</p>

<p><strong>This soup is soothing, comforting, very low in calories and is a good source of protein and nutrition.</strong></p>



<p>I wouldn&#8217;t make it by itself for dinner because it&#8217;s very light, but it&#8217;s perfect as a side dish or as a light snack anytime!</p>



<p>My two little boys (ages 10 and 12) love Egg Drop soup from our favorite Chinese Restaurant.  They kept asking for it, sooooooo it inspired me to try to make it at home!</p>



<p>I actually enjoy this homemade version even more because I know exactly what&#8217;s in it and can use high quality ingredients.</p>

<p>I gotta say that although I love that Swanson reduced sodium chicken broth, this <strong><span style="text-decoration: underline;"><a href="https://www.pacificfoods.com/">Bone Broth by Pacific Foods</a></span> </strong>is BOMB!  I really love it so much!</p>

<p>In fact I love it so much, I included it in <span style="text-decoration: underline;"><a href="https://happybeinghealthy.com/a-busy-day-things-ive-been-loving-lately/" data-type="post" data-id="19973"><strong>one of my &#8220;Favorite Things&#8221; posts</strong></a></span> a while back.</p>



<p>Both of these broths are good options for this soup, but the bone broth offers <strong>NINE grams of protein</strong> per cup as opposed to the chicken broth that only offers <strong>two.  </strong>Also, the bone broth only has <strong>90 mg of sodium </strong>and the chicken broth has <strong>570 mg!</strong>  Wow.</p>

<p>These are both fine options though!  I will say that my boys prefer the chicken broth more.  I&#8217;m sure it&#8217;s because it&#8217;s more salty.  They don&#8217;t love this soup quite as much when I use the bone broth&#8230;..but I love it!</p>



<p>Soooooo, just use whatever you prefer!</p>



<p><strong>Also, I use liquid aminos instead of soy sauce. </strong>  It&#8217;s just a bit healthier than soy sauce, but they will both work just fine!  If you use soy sauce, I would recommend reduced sodium.</p>

<ul class="wp-block-list"><li>4 cups reduced sodium chicken broth</li><li>1 teaspoon reduced sodium soy sauce (I use liquid aminos)</li><li>1 teaspoon sesame oil</li><li>frozen peas and/or carrots (as many as you prefer)</li><li>1 Tablespoon + 1 teaspoon cornstarch</li><li>3 Tablespoons water</li><li>4 eggs</li><li>1/2 teaspoon salt</li><li>1/4 teaspoon ground black pepper</li></ul>



<p class="has-medium-font-size"><strong>Directions:</strong></p>



<p>In a medium pot on the stove, mix together chicken broth, soy sauce and sesame oil.  Bring to a boil.</p>
