Air at Seaspice Miami’s menu moved effortlessly through green papaya salad, handmade tagliatelle with wild mushroom ragu and a choice of Chilean sea bass or prime filet mignon, each paired with wines from Tsinandali Estate. Daymond John’s latest creative evolution begins with a space. When I arrived at what appeared to be his garage studio, I realized I could not have been more wrong. What he’s building is a living ecosystem: part live-selling studio, part art gallery, part biohacking lab. It’s designed not for foot traffic, but for immediate global virtual reach.

“This is my representation,” John (56), a long-time Shark on ABC Network’s Shark Tank, explains. “Nobody’s going to come here physically; it’s just how I show up to the world now.”

The space brings together three lifelong passions that have quietly been converging for years: products, art, and biohacking. We all know John’s sixth sense for products, but this was business, modernized. Cameras and ring lights were positioned for live selling, or what John calls “QVC in your pocket,” a nod to platforms like Whatnot and TikTok Shop.

At this point, I became fully convinced livestream shopping isn’t a trend — it’s a shift. Because when John, one of the most influential investors and entrepreneurs of our time, is going live, that’s not experimentation. That’s the future.

“Was I really a designer?” he questions candidly. “I was a connector and a marketer.”

Live selling puts those skills front and center, cutting out unnecessary middlemen and giving creators, artists, and entrepreneurs direct access to their audiences.

Surprisingly, art didn’t enter John’s life as a business strategy, but as a solution to monotony. During the pandemic, after hundreds of virtual interviews and speaking engagements, he grew tired of the same branded backdrops. So he switched up the scenery — literally.

He began using art behind him as backdrops during interviews. Then something unexpected happened: artists started sending him pieces simply because their work was visible. “I’d tag them, or mention them casually on TMZ, and the artists started calling me saying, ‘I just sold that piece,'” he recalls.

What started organically has since evolved into Shark Art, a community-driven platform designed to uplift artists, especially those overlooked by traditional galleries. Although John is known for his hard truths, his genuine mentorship shines in each endeavor. He’s deeply aware of the struggles many artists face, particularly with addiction, financial instability, and exploitation.

“Artists don’t have the same safety nets as athletes or entertainers do,” he states. “When they make it, people are almost waiting for them to self-destruct.”

Shark Art brings accessible art into mainstream spaces, from galleries to mass retail, through a tiered system that ranges from exposure to full representation, often eliminating upfront licensing fees and instead sharing in success. It’s a model rooted in access, fairness, and sustainability — one that helps keep artists alive, not just relevant.

His latest chapters may catch others off guard — but not him. “Don’t think of me as the guy in the expensive suits,” he notes. “People think we were born like that.”

“I worked at Red Lobster for five years while building FUBU,” he says proudly. “I wanted to be a reality star who had their own business. In my little world, I wanted to do what Bethenny Frankel did.”

Despite being one of the most recognizable investors in the world, John measures success differently. Out of more than 140 Shark Tank investments, only a handful became major wins. Bombas, the standout, went on to become the most successful Shark Tank company globally.

“But I failed at 135 of them,” he admits.

He wrote three books before they became New York Times bestsellers. He gave up speaking in 2003 before going on to become one of the most sought-after voices in business, averaging 150 speaking engagements a year. “My first serious relationship failed, then the 10 clothing lines I had failed, I quit my religion when I was younger, I had cancer and was unhealthy,” John admits.

But throughout what can be seen as losses, his life was rebuilt after each fall.

“Failure is the foundation,” he says. “That’s the part people don’t want to talk about.” The skepticism he encounters, often from the people closest to him, is not something he resists. He welcomes it.

“They push you back,” he reflects. “You need people who question you.”

After spending a day with John, I learned he doesn’t stop; he just recalibrates. But the secret to how he consistently locks in, levels up, and still has energy to spare? Biohacking. That’s how this shark stays on top of the food chain.

Ultimately, Shark Gevity, his new longevity-focused venture, evolved with a clear conviction that longevity can be accessible. Not everyone can afford cryo chambers or six-figure biohacking machines. Aside from all the businesses and ideas in motion, the most grounding force in John’s life is his relationship with his wife, Heather. Their bond isn’t rooted in spectacle, but in shared values and longevity rituals.

“Nothing in the world can get in between evolution,” he says at one point, almost offhand. “People can’t get in between it.” That belief — steady, inevitable growth — mirrors the way he speaks about his marriage. There’s no performative romance or overstatement.

“We just have a sincere love for each other,” he explains.

Their relationship flourished years before Shark Tank. When the show launched, Daymond went from traveling 60 days a year to nearly 250. “You’d think the honeymoon wears off,” he says. “It didn’t.”

What endured was consistency and the ability to let one another be fully themselves.

He’s coined a term for the way he and his wife move through it all together: “couple-gevity”—an idea that longevity isn’t a solo pursuit but a shared practice.

After returning home from a long trip, John slips into a superhuman recovery ritual. It begins with an hour in an oxygen chamber, a pressurized environment where concentrated oxygen is delivered at higher-than-normal pressure to help accelerate cellular repair, reduce inflammation, and restore energy after physical or cognitive strain.

My day with John began with art, moved through business, offered health lessons, and even gave us a glimpse into his marriage. Through it all, one truth kept resurfacing: as it turns out, longevity isn’t about living forever; it’s about living fully, every time life asks you to begin again.

HAUTE LIVING: Can you walk us through the reopening of Bey Bey?

TIGER SALIBA: When we acquired the space in 2023 — after its initial opening — the kitchen wasn’t built to the standard we needed. More importantly, it didn’t allow for live-fuel cooking, and for me, that was a dealbreaker. I’ve loved cooking over fire since I was a kid; real charcoal and wood are central to how I think about food. We operated as a pop-up with Chef Geoff Lee, and the response was strong, but demand quickly outpaced our ability to execute because the infrastructure wasn’t there. Chef Geoff did an exceptional job within those limits, but we chose to do it properly: we closed, went through the permitting process, and rebuilt the kitchen from the ground up around a proper charcoal-and-wood hearth.

Today, everything that leaves the kitchen is cooked over live fire — a rare setup in the city. Once we committed to rebuilding, it felt natural to expand the culinary vision. Chef Geoff traveled to Mérida to meet Roberto Solís, and from the start, there was mutual respect. Their exchange of techniques and fire traditions is what ultimately shaped the relaunch and allowed Bey Bey’s vision to fully evolve.

HL: Bey Bey is rooted in the Lebanese phrase “Beyte Beytak” — “my home is your home.” What inspired you to bring that sentiment to Miami?

TS: “Home” is everything to me. I grew up in a five‑generation house my great‑great‑grandfather built; home was identity, memory, grounding. After everything unraveled and I had to leave my country, shaping this space gave me a way to rebuild what I’d lost. Designing Bey Bey felt like designing my own home in a new country. From the moment you walk in, it doesn’t feel like a restaurant: the kitchen counter is a real kitchen counter, the bar sits at kitchen height, and refrigerators are integrated into the back bar like at home. The living room reads like your best friend’s tasteful 1970s house; the garden, tile, textures, and artwork — some pieces flown in from Beirut or donated by partners — carry memory. These aren’t decorative choices; they’re personal. The place is meant to embrace, not impress, and that warmth is immediate and genuine.

HL: Bringing Chef Roberto Solís (from Huniik, ranked among the World’s 50 Best) to Miami for his first U.S. project is a major coup. What are some standout dishes on the menu? What about cocktails?

TS: Guests consistently rave about the short rib — it’s become a signature that captures the depth and intensity of our live‑fire approach. Personally, the kibbeh steak tartare is my obsession: I love tartare, and our version channels that through a Lebanese lens — elegant, precise, and craveable. I recommend it to every table and still get excited about it every time. Cocktail highlights and the broader beverage program are evolving; we’re building toward something very considered to match the food.

HL: In terms of design, Michael Dolatowski’s design creates a lush garden, jewel-toned dining room, and intimate “Living Room” lounge that feels like a stylish friend’s home. What was the inspiration behind this?

TS: Once the name and philosophy—Beyte Beytak—were clear, everything clicked. Michael presented mood boards and immediately understood the emotional brief, not just an aesthetic one. The design felt like a direct extension of the concept: warmth, intimacy, and lived‑in elegance. It unfolded naturally because the partners and I knew what Bey Bey needed to feel like, and Michael had the sensitivity to execute it exactly.

HL: You built an iconic nightlife and hospitality scene in Beirut with venues like B018, Überhaus, and others. What was the hardest part about leaving that legacy behind, and what gave you hope when you arrived in Miami?

TS: I didn’t leave by choice—I was pushed out. It was survival. I’d built an empire in Beirut and had always dreamed of coming to the U.S., but life and responsibilities kept me there until everything changed. Leaving feels like living two lives; who I was then and who I am now don’t fully overlap. What gave me hope was Miami—the light, the green, the ocean breeze, the openness of the people—landing here during a brutal period, and during COVID, no less.

HL: Looking ahead, what’s next for you in Miami’s hospitality scene?

TS: Right now, it’s about focus — making sure Bey Bey and Café du Bey are executed at the highest level and built to last. I have big ambitions for expansion and maybe even someday, a Hotel du Bey. And we have immediate plans to build a 360-degree back-bar to pursue a world-class cocktail program. But right now, I am laser-focused on fine-tuning the experiences that are slowly evolving into what we aim for them to be at Bey Bey and Café du Bey.

HL: What can we expect this season from Bey Bey in terms of programming? Anything else?

TS: We want the places to feel alive year‑round—nearly 365 days. Café du Bey will operate daily from 7 a.m. to 5 p.m. on weekdays and extend into evenings and late nights on weekends, with community moments like cheese & wine nights and backgammon gatherings. Bey Bey will have a weekly rhythm: a Taco‑Tuesday–style Mexico/Lebanon mash‑up; Wednesdays with guest chefs; weekends anchored by our core food programming. We’re launching lunch in February—clean, grill‑forward bowls, salads, and lighter yet satisfying options. The wine program will expand toward one of the strongest selections in the country.

A year into its West Hollywood residency, Zouk Los Angeles is still the loudest thing on the block. Literally and otherwise.

The short version: Singapore’s Zouk Group and LA’s own sbe — Sam Nazarian’s empire, the man who has spent the better part of two decades deciding what this city goes out to — joined forces and planted a 16,500-square-foot nightclub on La Cienega that somehow managed to make the rest of LA nightlife feel slightly underdressed by comparison. This wasn’t Zouk’s first American rodeo, either. The brand had already embedded itself on the Las Vegas Strip since 2021, doing exactly what it does best — making the room feel like the only room that matters — before Hui Lim and Nazarian decided LA was next.

It works. Overwhelmingly well.

The space itself — designed by Christian Schulz and the team at Studio Collective — is stadium seating wrapped around a dance floor, a DJ booth big enough to feel genuinely monumental, and The Mothership overhead (their words, but fair — the multidimensional ceiling lighting situation is the kind of thing you describe to people the next morning and they think you’re exaggerating). There’s an exterior patio lounge, a private lounge that doubles as a green room, its own entrance, its own patio, its own bar. Because of course there is.

The lineup this past year reads less like a booking calendar and more like someone’s very ambitious Spotify wishlist made real: Travis Scott, Lil Wayne, PlayBoi Carti, The Chainsmokers, Metro Boomin’, Gunna, Shaboozey — twice, apparently, once as performer and once as patron, which is a very specific kind of endorsement. The Grammys’ Billboard Power 100 landed here. Clive Davis was in the building. Mariah Carey was in the building. Justin Bieber has been in the building multiple times, which either means the vibe is immaculate or the guest list is very good at its job. Probably both. The regular-patron situation is equally unhinged in the best way — Jamie Foxx, Nina Dobrev, Julianne Hough, Zoey Deutch, David Dobrik — the kind of room where you stop doing double-takes because there’s simply too many to keep up with.

Hui Lim, for his part, sounds like a man who knew exactly what he was building. “LA is where culture, community, and creativity collide,” he said, “and it’s been inspiring to see our vision flourish here.” Nazarian, who has been reshaping this city’s nightlife for twenty-five years and shows no signs of slowing down, framed it as continuation rather than arrival: “Having spent the last two decades defining LA nightlife, I am incredibly proud of how sbe continues to pioneer and disrupt the culture.”

High praise. Arguably deserved.

Why the next generation of women in the spirits industry should never wait for permission.

You collaborated across winemaking and mixology — two worlds that overlap but operate very differently. How did this collaboration begin?

Ana Paula Bartolucci: From the beginning we knew we wanted to approach this project from a broader perspective. As winemakers — myself, Pauline, and the rest of the Chandon team — we already had experience working with sparkling wine. But when we started thinking about developing a trio of spritz expressions, we realized we wanted something more holistic. We were looking beyond the cellar, beyond traditional winemaking, and that’s when we brought Inés into the project. She brought the mixology expertise — the understanding of ingredients, sourcing, and how flavors actually work together in a cocktail environment.

Had you known each other before this project began?

Bartolucci: No, we hadn’t met before.
Inés de los Santos: But the collaboration came together very naturally. When I was invited to participate, there was already a sense of trust. At the beginning the project was highly confidential, but I knew I would be working with experts — women who were deeply respected in their field. That immediately made it exciting.

Working from California while collaborating with colleagues rooted in Argentina’s wine culture, you bring a distinctly different terroir and winemaking perspective to the project. How did that California influence shape your approach to the Spritz? 

Pauline Lhote: One of the reasons I love being the Director of Winemaking at CHANDON California is that our team has access to some of the most exceptional grapes grown anywhere in the state and can create sparkling wines that capture the bright fruit, acidity, and dazzling ‘California sunshine’ at an approachable price point. Working with Ana Paula and Ines in Argentina, the approach to crafting the new Spritz was fundamentally the same – use only the best possible ingredients from the best possible farms and terroirs to create a trio of bright, vibrant, ready-to-serve Spritzes that are effortless to mix, serve, and enjoy at any time. Here in California, I’ve always said that you don’t need a reason to gather and toast with CHANDON, and our CHANDON Spritz Collection was crafted with this same effortlessly hosting in mind: just pour over ice and serve. On my end, I also specifically brought insights from my work in California, drawing on my previous work with lemons and strawberries and various extraction techniques. We grow some of America’s most delicious produce here in California, so my expertise around extracting fresh flavors was useful in developing the all-new Spritz Lemon and Berries offerings. They are so fresh and delicious.

There’s also an interesting dynamic here — you’re working in adjacent industries, but they’re still very different disciplines. How did you actually make creative decisions together?

Bartolucci: It was very collaborative. We were constantly asking questions — “What happens if we try this ingredient?” or “What if we approach it this way?” We would test different ideas together.
de los Santos: And there was a lot of respect between everyone involved. No one was trying to dominate the process. It wasn’t about one perspective leading the project — it was about combining perspectives.
That’s what made the collaboration work.

You mentioned earlier that the spritz is often seen as a summer drink. Do you think that perception is changing?

de los Santos: The beauty of the spritz is that it’s actually not tied to one season or one place. Of course, people often imagine drinking it outside on a terrace at sunset. That’s the classic image — warm weather, friends, a beautiful view. But the spirit of the spritz is really about bringing people together. Not every place in the world has the same climate. Not every culture has the same traditions around drinking. But the spritz works everywhere because it’s social. It’s a collective drink.

The spritz category has exploded globally in recent years. What did you want to do differently with this project?

Bartolucci: One of the most interesting things about the project is that each expression has its own personality. Each one speaks to a different type of consumer, a different moment.
At the same time, they share a common philosophy. They’re ready to serve — which makes them accessible — but they’re built with the same level of quality and attention to detail that we apply to our wines.
For us that was essential.

What was important to you from a production standpoint?

Bartolucci: Using real ingredients was very important. Natural ingredients, organic ingredients — not artificial flavors.
The work happens in the winery, but it’s about much more than fermentation. It’s about sourcing the best fruit, the best botanicals, and making sure everything comes together in a balanced way.

You mentioned sourcing ingredients from specific regions. Can you talk about that process?

de los Santos: The ingredient sourcing was actually one of the most fascinating parts of the project.
The berries come from Patagonia. The hibiscus comes from northern Argentina. The oranges come from a very specific organic farm that has been working organically for decades.
It’s an incredible level of detail. When people taste the drink, they experience the result of that work — but behind it there’s a huge effort to find the right ingredients.

The drinks world has historically been male-dominated. Have you seen that change over the course of your careers?

Bartolucci: In winemaking, many of the challenges were faced by the women who came before us.
Twenty years ago, it was much harder to see women leading wineries or occupying positions of responsibility. Those women opened the doors for us. Today the industry is much more balanced. In Argentina especially, we’re seeing more and more women running wineries and leading teams.

And from the perspective of the bar world?

 de los Santos: When you build a career over thirty years in this industry — and in 1988, when I started, it was overwhelmingly male — you inevitably face obstacles. But here’s what I’ve come to believe: when women reach leadership positions, we also inherit a responsibility. We have to help create opportunities for others, especially younger women entering the industry now. Sharing knowledge is part of that. Showing them the path forward. Making sure the door doesn’t close behind you.

There’s also a luxury positioning here. In the world of spirits and wine, luxury can mean many things. What does it mean in this context?

Bartolucci: For me, luxury is about craft. Before we release any product, we need to be certain it meets the same standards of quality that we apply to our sparkling wines. That means a lot of work behind the scenes — in production, in sourcing ingredients, in refining the process. When you see the Chandon label, it represents that effort.

de los Santos: Craft is the key word. And craft requires an absolute dedication to finding the best — the best ingredients, the best process, the best version of the thing you’re trying to make. That quest applied to every market in the world equally. It wasn’t done differently for the US than for France or anywhere else. Because they truly believed there was no other way to bring something of real quality into this category.

So luxury here is about craftsmanship rather than exclusivity.

de los Santos: Exactly. Craft is the key word. It’s about attention to detail and dedication to doing things properly.

You all have built impressive careers in your respective fields. What advice would you give to young women entering the drinks industry today?

de los Santos: Believe in yourself. Work hard. If there’s something you want to do, don’t let anything stop you. And if there’s a moment when you need to speak up — raise your hand.

Bartolucci: And if you want something, just go for it. The journey will have obstacles — things you don’t like, moments that feel impossible. But if you have a real vision, keep moving toward it. That’s the only way it works. You have to believe in yourself. Nobody is going to do that part for you.

This story highlights the growing presence of women shaping the future of the drinks industry. From your perspective as a winemaker, how have you seen opportunities evolve for women in wine and spirits? 

Lhote: We still have a long way to go, but opportunities for women in wine and spirits are continuing to evolve and expand through increased representation in leadership, winemaking, and ownership. At CHANDON California, Dawnine Dyer was the first female winemaker back in the ‘70s, and one of the first in the entire Napa Valley region. Her work revolutionized sparkling winemaking for Northern California, and I very much admire her career. When I came to CHANDON California, I felt great pride in reigniting that torch and ensuring a strong legacy of exceptional sparkling winemaking and female leadership for CHANDON. The new CHANDON Spritz Collection is the latest (and certainly the most flavorful) example of a female-led project and female-crafted product from CHANDON. This trio is the result of myself, Ana Paula, and Ines all coming together to apply our unique expertise to creating three distinct new ‘day cap’ Spritzes. Working with other women to shape the future of Spritz was a truly special experience.

How important is mentorship — particularly when it comes to encouraging the next generation of women entering wine and spirits? 

Lhote: I am a big believer in mentors and finding someone who champions your abilities as you navigate career advancement and step into leadership roles. One of the biggest challenges of being a female winemaker in a male-dominated industry like wine and spirits is finding advocates and mentors to champion your ideas and invest in your professional success. I am so proud that globally CHANDON is personally and professionally committed to the success of talented female winemakers – including myself and my Spritz Collection co-creator, Ana Paula Bartolucci. When women champion the contributions and creative ideas of other women, we all benefit. And in the case of the new CHANDON Spritz Collection, it was this collective effort and mutual respect that led to the creation of these three new flavors. It was truly a team effort!

There’s a particular kind of restaurant that doesn’t announce itself. It doesn’t need to. You walk in and something shifts — the light, the noise level, the way the room seems to be operating on its own internal logic — and you understand immediately that you’re somewhere that was built with genuine conviction.

Casa Dani is that kind of place.

The restaurant, a collaboration between sbe — led by CEO and chairman Sam Nazarian — and three-Michelin-starred Spanish chef Dani García, landed in LA’s Century City as one of the global hospitality and entertainment group’s most ambitious culinary bets to date: a sprawling 17,000-square-foot dining destination that pairs Casa Dani with a newly reimagined Katsuya by master sushi chef Katsuya Uechi. Two powerhouse concepts, one roof, one very specific vision of what a night out in Los Angeles should feel like.

But Casa Dani — literally “Dani’s House” — is the anchor. Inspired by García’s Andalusian roots and a deeply Mediterranean philosophy of food, it was designed to feel less like a formal dining destination and more like the kind of place where time moves differently. Where a meal unfolds without schedule. Where guests feel — genuinely, not as a marketing conceit — as though they’ve been welcomed into the chef’s own home.

García sees it the same way. “It’s an honor to partner with Sam Nazarian and sbe to open Casa Dani in the beautiful and sunny city of Los Angeles,” he says. “I’m excited to share the traditional flavors of my beloved Andalusian and Spanish roots through family recipes and culture.” It’s a statement that cuts to the heart of what this space is meant to be — not a restaurant trading on a name, but an extension of a chef’s own story.

For Nazarian, the collaboration extends well beyond another high-profile opening. It’s a thesis statement.

“The story behind a brand matters as much as the menu,” he shares, noting that in García, he found someone whose story is impossible to separate from the food. A cooking philosophy rooted in place, memory, and the very particular pleasure of a meal that refuses to end on schedule. That’s not a concept you manufacture — that’s a person.

Which is exactly the point.

Nazarian has built a career on recognizing what can’t be faked — and more importantly, on understanding why it matters. It’s a sensibility that didn’t emerge from business school or hospitality theory, but from decades of watching what actually makes people return to a place, what transforms a venue into a destination, and what separates a successful opening from something that reshapes how a city experiences itself. That kind of clarity doesn’t arrive fully formed.

He launched his first venues in his twenties on instinct and appetite for risk. Decades later, the lens has widened considerably — less about individual venues now, more about communities. How spaces shape the way people gather. How cities evolve. How luxury itself is being quietly redefined by a generation that values time, health, and genuine human connection as much as it values design or exclusivity.

Every city has its own rhythm, he’ll tell you. His job is learning to read it. He’s spent decades doing it — reading how Miami transformed from seasonal party destination into one of the most dynamic hospitality capitals in the country, watching how each city requires a different sensibility that can’t be imported or faked. And Los Angeles right now is operating at a frequency that demands something different — not another scene, not another concept trading on hype, but a place built with the kind of conviction that doesn’t announce itself, that earns trust meal by meal, night by night.

When he walks into a restaurant or lounge, he says he knows within moments whether something is working. Not from the décor, not even from the menu. From something harder to manufacture — the culture of the room. The way the room anticipates its own needs before they’re articulated. The invisible pulse that determines whether a space feels alive.

Those are the signals that something bigger than a restaurant has been built. Those are the signals that it lasts.

In the conversation that follows, Nazarian reflects on the philosophy behind building hospitality ecosystems, the soul behind Casa Dani, the evolution of luxury in an increasingly global world, and why — after more than 25 years in the industry — what excites him most is still exactly what drove him at the beginning: the possibility of creating spaces where life unfolds in real time.

You’ve always said you’re not just opening venues — you’re creating entire ecosystems of nightlife, dining, and culture. When you walk into a space, what tells you instantly whether the energy is right or completely off?

When I know something is working or not working, it definitely happens well before I enter the space. Brands today, locations, outlets — they’re all considered a part of how they’re branded in the perception of what brings people together, what makes them unique, and especially when I walk into the place, the first thing I look at is the culture of the team, the culture of the staff, and those are really the key ways in which I gauge how the space works or not.

Hospitality trends come and go constantly, but you’ve managed to stay culturally relevant for decades. What’s your secret radar for knowing what people will want before they know it themselves?

I’ve tried to stay relevant by doing one important thing and one thing only — building brands, verticals, and places specifically for what I think I need in that stage of my life. I built SLS 25 years ago as a luxury lifestyle because that’s really what I wanted as a consumer, and we’re still building things that we believe are going to be hugely disruptive — but are things that I personally want at this stage of my life.

If you look back at the earliest sbe venues compared to what you’re building now, what’s the biggest thing you’ve changed your mind about?

The earliest venues I built were really around an idea and an instinct when I was 25 years old, and really when I created sbe at 26. Now, when we are building, I think more about the consistency of change in people’s lives and really providing what we think is not only going to be an amazing brand, but how people can ultimately live a better life by being a part of our community.

A lot of brands talk about “luxury,” but the word means something different today. What does luxury actually look like in 2026 — especially for the kind of global crowd that moves between Miami, Dubai, LA, and Europe?

It’s the most important thing we think about every day: what does luxury mean? What does a luxury consumer need today that they’re not getting from the amazing luxury brands that are out there today? What we wholeheartedly believe is luxury equals longevity, luxury equals access to being able to live a better life, luxury equals quality, and luxury equals time. Those are the things that we believe a luxury consumer is demanding and what we are building for them within our various platforms.

Sbe has always blended high-end dining with design, nightlife, and a bit of spectacle. Is there still room for glamour in hospitality, or have people shifted toward something more relaxed?

One of the things that we focus on is: where is the consumer going? Where is the young consumer going? Where are the new consumers coming into the market, and what is important to them? We definitely feel that the super high glitzy product or the glamour product in hospitality has become a little less relevant. What’s become more relevant is the story behind the brands, behind the experiences, behind the restaurants, behind the hotels… and people really are now more interested in the story and how it relates to the things they care about. People are more aware, more educated to their surroundings, and more conscious of what they affiliate with, which we greatly respect in the world of hospitality.

Now, let’s talk Casa Dani. You’ve worked with some of the world’s most celebrated chefs, but Dani García brings a very specific Andalusian soul to the table. What was the first meal of his that made you think, we need to build something together?

When I first met Dani García, it was in his hometown of Marbella, Spain, where he owns several restaurants and offers so many different expressions of his amazing craft. Obviously, the dish you have to have when you visit a Dani García restaurant is his unbelievable tuna carpaccio — it is really something that I’ve never seen executed that way — followed by his oxtail brioche, and ultimately his world-class paellas. But it wasn’t as much about what I ate as it was how I felt being around him — seeing his unbelievable sophistication, but humility at the same time. He is everything you want to see in an incredible chef and partner.

Casa Dani feels less like a formal restaurant and more like a Mediterranean gathering place. Was that intentional — to make it feel like the kind of place where you can sit for hours, or where Sunday brunch accidentally turns into dinner?

As we started thinking about Casa Dani as a brand, we started thinking about the Mediterranean, and all the amazing places and destinations we’ve gone to, and what Dani was able to bring was his unbelievable connection to all these memorable moments. When you come to Casa Dani, you can see his interpretation, his house, his home, how he was raised, and that’s why we called it Casa Dani. We wanted all the patrons to experience a piece of Dani’s influence and roots, and yes, feel comfortable to stay and enjoy long meals with a similar sense of home.

Spanish food has this amazing ability to be both refined and incredibly joyful. How did you want Casa Dani to capture that spirit?

Restaurants today and operators today really need to understand the 4th dimension. The 4th dimension is the soul of the space. We’ve proudly built over 200 restaurants around the world in the last 25 years, and the ones that have really been effective have a soul and a story, capturing the spirit, as you say. In addition to that, I believe that Casa Dani should be a place where people come to celebrate and have an experience that is truly unique, but also a place that they feel they can go to five times a week. It’s as much about the feeling as it is about the product, and really experiencing that lens through Dani’s culinary palate.

You’ve always believed restaurants should have a rhythm to them — happy hour, music, late-night energy. Why is that daily pulse so important to creating a place people actually live in, rather than just visit?

What we believe and what we have tried to execute in the over 200 restaurants we’ve built around the world over the last 25 years is that restaurants need to stand for something — have a point of view, have a personality. Brands, design, culinary, menu, mixology — all of that is very important, but ultimately the story of why this location or why this brand deserves to exist is really the most important.

Speaking of which: Miami. Miami has become one of the most electric hospitality cities in the world. What does that city have right now that other global markets don’t?

In the 20 years that I’ve been doing business in Miami, including the 12 hotels that we’ve built in this market, I can definitively say that today’s Miami is much different than it has ever been. Miami is much more exciting, it’s much more optimistic, and more evolved. There has been a major shift, as people really believe that South Florida and Florida as a whole is a place they can see themselves living full time, with an influx of notable industry and VIPs bringing extra attention to that transition of thought in a positive way. When I started our sbe presence in Miami, it was treated as a destination. The sophistication of Miami has also come through as a result of different personalities and Miami locales that have built a presence and made Miami their home. I really believe that Miami has the opportunity of being the hospitality and culinary epicenter of the U.S. for the next foreseeable future.

You’ve spent your career creating places where people celebrate, fall in love, make deals, and stay out way too late. Do you ever walk into one of your own venues and think, This is exactly the kind of night I was hoping people would have?

I’ve been blessed over the last 25 years of creating these environments and seeing the fruition of our work where people have met, got married, had kids — and now their kids are dining at our restaurants and staying at our hotels. But more importantly, we’re building residential communities. We’ve built over 4,000 residential units around the world from Dubai to Argentina, the Bahamas, and of course Miami, and people are living in our creations. That to me is the most exciting element — when I can see people really choosing our brands as a place they want to live.

You’re hosting an upcoming VIP dinner at Casa Dani bringing together tastemakers and industry friends. What do you love most about those nights — when the room is just the right mix of people?

When I think about an unbelievable celebration of bringing people together, it’s exactly that. I think today we’re more apt to do Zoom calls or to stay home — at least at my ripe age of 50. That said, there is also an excitement to surrounding ourselves with friends, people we love, and hosting an event where we can bring some of our new friends to intermix with some of our old friends, and people that really can talk about things that are exciting and things that are optimistic. That is a beautiful experience and always a special night.

When you open something in Miami, the bar is incredibly high — people there have seen everything. How do you create something that still feels fresh?

Miami today is a city of many more communities than when I first came here. When I began here in 2004 and we were building the SLS South Beach, the preferred destination was just Miami Beach (South Beach). Today, when you have different hospitality markets like Coconut Grove, Design District, Brickell, or Wynwood, there is much more to consider. There are a lot of different factors that contribute to really identifying yourself as a disruptor. I believe what we have built and are building in our new platforms are definitely disrupting with what we believe is still not present yet in Miami — and we think that Miami will embrace our projects with excitement and wholeheartedly.

After decades in the hospitality world, what still excites you the most: the design, the food, the crowd, or that moment when a room suddenly comes alive?

As you can see by our new platforms in hospitality, what excites us the most is disruption — changing people’s lives, giving back to people that have been part of our community for the last 25 years. I love introducing new ideas and great partners like Tony Robbins and Marc Anthony, and great culinary interpretation of where we think culinary is going. What excites me is the disruption component of hospitality, residential, and of course F&B.

If someone wanted to truly experience the sbe lifestyle in one perfect evening, what would that night look like from start to finish?

The day would start by waking up at an estate residence, working out in one of our exquisite 25,000-square-foot or so spaces designed for longevity, human performance, and medical spa top-of-the-line facilities, starting the day giving back to their soul. Next would include going to one of our amazing restaurants for some lunch, meeting with friends, meeting with people that they love being around, and doing what they love, and then finishing the day at one of our Katsuya restaurants for dinner, where they can continue that world of culinary and friendship, to finish the day exactly where they started — in a beautiful estate residence where everything is beautifully manicured for longevity and sleep, giving back to their soul at the end of a beautiful day. That would be an ideal sbe day in the life.

And finally, what to you is the greatest luxury in life and why?

To me, the most amazing and greatest luxury in life is time, and to have time at your disposal. Time is precious, and you have to be healthy to have time. It is a luxury to build an amazing network around you of friends, people you love, family, and kids — what we believe is luxury is longevity. And for the last five years, we’ve been solely focused on creating environments that give people an opportunity to reinvest in themselves. We want people to have the most amazing time and live the most effective life that they want to live, with love being at the forefront.

OLY.B manually refines every portrait, working for hours on subtle details: the gaze, facial tension, micro-expressions and emotional atmosphere of the subject.

Once the image reaches the exact intensity she seeks, the work moves into its physical stage. The portrait is transferred onto wood or aluminum, sealed with resin, and then layered with fragments of real shattered glass. The pieces are arranged one by one like a puzzle, forming the illusion of impact, as if the figure is breaking through the surface of time itself.

Not many people can say they’ve stayed on a yacht, let alone a 49.99-meter Cecil Wright motor yacht named CONTIGO. This megayacht, delivered in 2024 by the renowned Italian shipyard Sanlorenzo, was nothing short of a penthouse floating on the crystal-clear waters of the Bahamas’ Atlantic Ocean.

Upon arriving via a Wajer 55 chase boat, greeted by the awaiting crew, felt like stepping into the opening scene of The White Lotus — minus the drama, plus the effortless precision and polish of a Four Seasons-caliber staff. As my toes touched the wood-finished deck, a wave of euphoria washed over me. A flute of bubbly champagne was elegantly served, garnished with a rosemary sprig, a subtle cue that set the tone for a truly niche experience.

You know the kind: the stories you tell when meeting someone new or a friend asks, “What’s the coolest thing you’ve ever done?”

My stay was only one night, but Studio Lissoni’s yacht interior, the beach club and ocean lounge, dedicated spa and sauna, fully equipped gym, deck jacuzzi and the Water 55 chase boat inviting access to spontaneity, altered my life perspective in ways that typically take years to achieve.

Playing in the sun and water for hours reverted me back to the peace of childhood. She had this undeniable power of drawing out pieces of me I hadn’t touched in decades, each space awakening another part of myself.

Each time I returned to this body of steel and grace, I was greeted with a new surprise. Sunset called for Aperol spritzes; the next day answered with margaritas. Each time served in the calming atmosphere where the only sound was the ocean itself. Through its advanced onboard systems, the yacht achieves near silence, with noise, vibration, and emissions reduced to a minimum.

Getting ready for dinner, I made a request for my drink of choice. The professional crew of 11 made it materialize instantly, as they did with every wish throughout my stay.

As evening descended, CONTIGO began to set the stage for dinner with ambient lighting features that made me feel safe in her hands. If she could display such moody, sophisticated lighting, she could do anything.

But in the morning, she truly glowed. I sipped my coffee by the sleek, mirrored spiral staircase that reflected back the hues of ocean blues dancing across its surface. For the record, CONTIGO is a “she” because only something this beautiful deserves the feminine — a maritime tradition I now fully understood.

In this morning light, with the whole world’s hum around me gone silent, I found a brief moment of stillness that offered up a synchronicity, a realization, a breakthrough. The list of CONTIGO’s allure goes on. My stay brought forth a message from the universe I’d been trying to access for years.

We all have a home away from home. While it may sound pretentious, the Four Seasons in Boston is mine. Sure, it has the brand’s signature fluffy beds, ultra-luxe amenities, spa robes, and must-order turkey club for room service. But the Back Bay location is special to me—it’s a generational home for my family.

Our Four Seasons story goes all the way back to the 1980s, when my grandparents were living at the hotel. My grandma and grandpa moved into their residence at the hotel in 1986. The hotel had opened just the year before, and their apartment was new, beautiful, and furnished to perfection. Its sweeping windows overlooked the Boston Commons, and they had access to the hotel’s pool, gym, and beloved Bristol Lounge downstairs. My grandma loved the location; she would walk across the Commons to Beacon Hill, and stroll up and down Newbury street. They knew the doormen personally, and the hotel would even send up my grandma’s favorite bran muffins to the apartment. On the Fourth of July, they had the best view in Boston of the fireworks. My grandpa’s 60th birthday party was held in their apartment, and the Four Seasons catered it. And when my grandparents moved out in 1993 to retire to Florida they would always come back and stay at the Four Seasons, greeted by hugs from the doormen.

In 1995, my parents got married at the hotel. They had met in Boston at a tennis club, dated for about 2 years, and celebrated their union with a Sunday afternoon wedding in one of the stately dining rooms. There was dancing, amazing food, of course, and a year later, my parents were invited back for a complimentary dinner to celebrate their one-year anniversary.

In 1998, I was born in Cambridge, and though I spent my childhood in Chicago, Boston was always my home. Maybe it was because I was born there, maybe it was because I identify as a diehard Celtics supporter, or maybe it was due to our frequent family trips to the city and Cape Cod. We would always stay at the Four Seasons if we could, and my sister and I would be so excited for the stuffed animal wagon at check-in and the silver dollar pancakes dusted with powdered sugar in the mornings.

I ended up going to college just outside of Boston in Medford. On the weekends, I would take the train to the Back Bay stop, and I would walk around the Commons and pop into the Four Seasons to say hi to the doorman I had come to know over the years. When I transferred to school in Rhode Island, my dog and I would still make the visit to the hotel—never to stay, on a college budget that was of course not the case—but just for a sense of familiarity. 

With my family back in Chicago, I found comfort in the lobby of the hotel. It reminded me of my grandma and my grandpa, the love between my parents, and times together as a family. And now, it’s become a tradition to go back. While I might live a few hours away in New York City, and am lucky enough to have the Four Seasons mattress in my apartment, nothing quite feels the same as a proper visit to the hotel itself.

So I go back when I can. Even if it’s not for a stay, just seeing the outside of the hotel from the Commons brings a rightness to my heart. It might sound cheesy, it might sound pretentious, but the Four Seasons in Boston will always be my second home.

Las Vegas pool season is officially, aggressively, early — and if you needed a sign to book something, record-breaking March temperatures are it. We’re talking pool weather before the rest of the country has even retired its puffer coat, which is honestly on-brand for a city that operates entirely outside the laws of reason.

So. Where are you going?

The splashiest (sorry) new offering is the Resorts World Pool Deck, which just reopened after a multimillion-dollar refresh of its 5.5-acre complex — seven distinct pools, upgraded cabanas with draped privacy panels and misting fans, and the Athena Infinity Pool, which at 1,800 square feet and with Strip views, is the kind of thing you photograph and immediately make your lock screen. The GO Pool at Flamingo is back for its second season and comes loaded with a 30-seat swim-up bar and five pools across nearly 1.5 acres, which — yes, we’re doing that.

For the off-Strip crowd, Durango’s Bel-Aire Backyard is heading into its third season and honestly feels like the most considered pool experience in the city right now. Live DJs run Saturday through Monday, there’s an Aloha Fridays series returning in May, and the Poolside Concert Series — presented with AEG — is stacked. Scotty McCreery, J Boog, Thievery Corporation. It’s genuinely diverse programming for a venue that doesn’t have to try that hard based on vibes alone.

The legacy options remain the legacy options: Bellagio’s five pools and four whirlpools in that Italian courtyard setting where you can order a poolside facial and feel absolutely unhinged about it (complimentary). The Cosmopolitan’s Boulevard Pool. Garden of the Gods at Caesars. You know the greatest hits.

On the dayclub front — because yes, Las Vegas dayclubs are their own taxonomy now — Marquee Dayclub at the Cosmopolitan has a revamped rooftop with a new stage and sound system and is already open, going seven days a week starting March 25. Kassi Beach Club at Virgin Hotels returns March 27 with its Mediterranean coastal-Italian-inspired vibe and full poolside menu, which is giving dinner party at a very attractive stranger’s house. And OMNIA Dayclub at Caesars is incoming for this season — 46,000 square feet, two pools, top-tier DJ bookings — and is already positioned as the kind of thing people will absolutely be insufferable about attending.

The genuinely thrilling new arrival: Tailgate Beach Club at Mandalay Bay, debuting May 16 with Snoop Dogg, of course. It’s the first sports-centric dayclub on the Strip, 125 feet of LED screens, heated pools. Is it absurd? Yes. Is Snoop Dogg the correct opening-night artist for a venue called Tailgate Beach Club? Somehow, absolutely.

Mandalay Bay Beach is also open for the season, which is worth noting if you have children or simply enjoy 2,700 tons of sand and a wave pool that can produce six-foot waves. The same resort will also have two major venues operating simultaneously this summer, which is either genius venue management or a logistical fever dream, probably both.

The season, in short, is here — and Las Vegas, as ever, is not doing it quietly.

Located on the 54th and 55th floors of 830 Brickell, Miami’s newest architectural landmark, the contemporary Italian restaurant and invitation-only members club immediately establishes itself as a refined destination above the city — and we had to get an inside look at what exactly makes Seia the most talked about reservation in Miami so far in 2026.

The evening began in the lobby of 830 Brickell, where a personal host greeted and escorted me to the elevators. It was a subtle yet intentional gesture that set the tone for the experience ahead. When the doors opened, I was welcomed into a setting that felt less like a restaurant and more like an intimate, curated gallery. Museum quality artwork anchors the interiors, with major works by iconic contemporary artists such as Andy Warhol and Damien Hirst creating an arresting dialogue between art, architecture, and hospitality.

Starting with the dining experience, Seia’s culinary philosophy reimagines Italian tradition through a bold, ingredient-driven perspective. Guided by seasonality and meticulous technique, the menu feels timeless yet newly expressive.

I was seated at a table set with the finest Christofle cutlery, a subtle detail that signaled what was to come. We began with freshly baked focaccia followed by a beautifully composed vitello tonnato featuring tender veal layered with silky tuna sauce, pickled red onions, capers, and delicate croutons. The charcoal-grilled carciofo alla brace arrived next, with vibrant herb oil and bright lemon, a perfect balance of smoke and freshness.

The mixology program is equally thoughtful. The L’Ora D’Oro commanded attention from the first sip, offering a seductive twist on a dirty martini elevated by smoked olive brine, citrus bitters, and a subtle depth that made it both elegant and playful.

Other standouts on the menu I’m already planning to return for include the carpaccio di gamberi rossi, showcasing prized Mazara red prawns dressed with limoncello vinaigrette — a dish that perfectly captures Seia’s philosophy of letting exceptional ingredients shine.

For our mains, the pastas were perfectly done, from the rigatoni al pomodoro with datterini tomatoes from Vesuvio, Brazil, to the tortelloni alla napoletana, filled with red-wine-braised short rib and finished with sage butter. The risotto al tartufo arrived topped with freshly shaved black truffle, while the pan-seared Mediterranean branzino with eggplant and cherry tomatoes offered a lighter yet equally refined finish. We ended with tiramisu, layered with mascarpone mousse and espresso-soaked ladyfingers.

Panoramic views of Biscayne Bay and the Miami skyline framed the entire experience, reminding you that this is not just dinner — it’s a moment suspended above the rhythm of the city. Stepping onto the expansive terrace, where views stretch from the buzzing dining room to the open skyline beyond, there is a palpable sense of movement and anticipation. The seamless energy between indoors and out hints at the vibrant role Seia is destined to play in Miami’s cultural and culinary scene.

THE MEMBERSHIP CLUB

But the night doesn’t end at the restaurant.

One floor above sits Seia Club, the invitation-only private members lounge that truly defines the concept. Designed as a modern metropolitan club, the space transitions throughout the day from an exclusive setting for meetings and quiet connection into a vibrant social destination after dark.

When I arrived upstairs, the energy was unmistakable. Live entertainment filled the room, with an incredible singer whose voice effortlessly drew the room in while still allowing conversation to flow. The atmosphere evoked a timeless private members club, sophisticated, subtly electric, and attracting an exceptionally well-curated crowd.

With sweeping city views and a beautifully designed indoor lounge that extends onto an outdoor terrace overlooking Biscayne Bay, the club creates an environment where business, culture, and nightlife seamlessly intersect. Member programming, from private tastings to chef-led dinners and other curated experiences, is thoughtfully designed to satisfy even the most discerning taste for luxury.
