<h3><b>The New York Sour</b></h3>
<p><span style="font-weight: 400;">A modern take on the traditional Whisky Sour, the New York version displays the rich and warm colors of Autumn. On the palate, the red wine adds extra flavor and complexity to this classic cocktail. We recommend using something dry and fairly robust, like a Cabernet Sauvignon. If you would prefer a richer and sweeter profile that compliments this recipe&#8217;s counterparts, perhaps try a bourbon barrel-aged dry red wine. </span></p>
<p><b>What you’ll need:</b></p>
<p><span style="font-weight: 400;">2 Ounces bourbon or rye whisky</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce lemon juice (freshly squeezed)</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">¾ O</span><span style="font-weight: 400;">unce simple syrup</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Dash Angostura bitters</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">½ Ounce dry red wine </span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">Lemon peel (to garnish)</span></p>
<p><b>How to make it:</b><b><br />
</b><b>1.</b><span style="font-weight: 400;"> Combine all ingredients except red wine into a cocktail shaker without ice.</span></p>
<p><span style="font-weight: 400;"><strong>2.</strong> Dry shake your cocktail for at least 20 seconds. *</span></p>
<p><span style="font-weight: 400;"><strong>3.</strong> Add ice and shake your cocktail for an additional 10 seconds or until the outside of the shaker feels frosty-cold.</span></p>
<p><span style="font-weight: 400;">[*If you would prefer a foamier New York Sour, try using the reverse dry shake method instead.]</span><span style="font-weight: 400;"><br />
</span><b>4. </b><span style="font-weight: 400;">Strain into an ice-filled glass.</span><span style="font-weight: 400;"><br />
</span><b>5. </b><span style="font-weight: 400;">Slowly pour your red wine over the back of a spoon and onto the top of the drink, creating a “float”.</span><span style="font-weight: 400;"><br />

<p><span style="font-weight: 400;">Combining the aromatics of Lillet Blanc (a white wine apéritif made from Bordeaux-grown grapes), a kick of gin and the nutty notes of Crème de Noyaux; the Lily is a smooth and inviting cocktail conveying a beautiful pinkish-red hue.</span></p>

<p><span style="font-weight: 400;">1 Ounce gin (London dry style preferred)</span></p>
<p><span style="font-weight: 400;">1 Ounce Crème de Noyaux*</span><span style="font-weight: 400;"><br />

<h3><b>The Curtain Call</b></h3>
<p><span style="font-weight: 400;">This version of the ‘Curtain Call’</span> <span style="font-weight: 400;">is by far the best, most balanced and most fitting of the Fall season. The Curtain Call offers fresh, herbaceous notes from the basil leaves and a subtle, biscuity element from the added champagne. This refreshing drink is also a great cocktail option to make by the jug, for when you have company on a lazy afternoon.</span></p>
<p><b>What you’ll need:</b></p>
<p><span style="font-weight: 400;">3 Basil leaves</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce white rum</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">⅔ Ounce lemon juice (freshly squeezed)</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">¾</span><span style="font-weight: 400;"> Ounce simple syrup</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">¼ Ounce Campari</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce Champagne or Brut sparkling wine</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">Extra basil leaves for garnish</span></p>
<p><b>How to make it:</b><span style="font-weight: 400;"><br />
</span><b>1. </b><span style="font-weight: 400;">Muddle your basil leaves with the rum and lemon juice in a shaker.</span><span style="font-weight: 400;"><br />
</span><b>2. </b><span style="font-weight: 400;">Then add ice, simple syrup and Campari and shake for at least 15 seconds or until thoroughly cold.</span><span style="font-weight: 400;"><br />
</span><b>3. </b><span style="font-weight: 400;">Strain into a chilled glass and top with sparkling wine. </span></p>
<p><strong>4.</strong> Garnish with a whole fresh basil leaf, or a black olive on a pick.</p>
<p><strong>5.</strong> Take a seat and indulge in this delicious cocktail.</p>

<h3><b>The Rosé Wine Mojito</b></h3>
<p><span style="font-weight: 400;">No one can turn down a good Mojito. Take your much-loved Mojito recipe to the next level by giving it the rosé treatment. The strawberry and rhubarb notes you commonly get from a quality rosé wine pair incredibly well with the classic mint and lime flavors. Our particular version includes dark rum instead of the usual white rum, for added depth and tastiness.</span></p>
<p><b>What you’ll need:</b></p>
<p><span style="font-weight: 400;">Mint leaves (procure more than you think you’ll need)</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce dark rum</span></p>
<p><span style="font-weight: 400;">½ Ounce simple syrup </span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce lime juice (freshly squeezed)</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">2 Ounces rosé wine</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Bottle grapefruit infused mineral water or flavored soda (preferably unsweetened)</span><span style="font-weight: 400;"><br />
</span><b></b></p>
<p><b>How to make it:</b><b><br />
</b><b>&#8211; </b><span style="font-weight: 400;">This drink can be completely built in the same glass you drink it from. &#8211;</span><b><br />
</b><b>1. </b><span style="font-weight: 400;">Place a good handful of mint leaves (approx. 6 is enough, but some people like their drink super-minty) along with the simple syrup, rum</span><span style="font-weight: 400;"> and lime juice into a shaker tin. Muddle thoroughly.</span><span style="font-weight: 400;"><br />
</span><b>2. </b><span style="font-weight: 400;">Add ice and shake for at least 10 seconds. </span></p>
<p><strong>3.</strong> Double strain into a glass filled with ice cubes or an ice spear, if you want to switch it up.</p>
<p><b>4.<span style="font-weight: 400;"> Add the rosé and stir well. </span><span style="font-weight: 400;"><br />
</span>5.  <span style="font-weight: 400;">Include a few whole mint leaves to garnish, pushing a couple down into the drink.</span><span style="font-weight: 400;"><br />
</span>6. <span style="font-weight: 400;">Top with grapefruit soda and stir again, but this time lightly, as to not disrupt the bubbles.</span><span style="font-weight: 400;"><br />

<p><span style="font-weight: 400;">When it’s nearing the end of the night, you’re probably feeling like having something a tad sweeter and a tad stronger. This dessert wine-based drink just might be the ticket for you. The original is called The Smokey Joe, but our version is slightly tweaked to include a dry white wine instead of sake. We believe the flavors work well: a harmony of citrus, smoke and sweetness. This is the Smokey Joe-lene. (Try it with a salted-caramel dessert!)</span><span style="font-weight: 400;"><br />

</span><b>What you’ll need:</b><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">2 Ounces dry white wine*</span><span style="font-weight: 400;"><br />

</span><span style="font-weight: 400;">½ Ounce peated Scotch whisky**</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">1 Ounce Sauternes/late-harvest white dessert wine***</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">[*We recommend using something citrusy like a Riesling or Semillon.] </span></p>

										<content:encoded><![CDATA[<p><span style="font-weight: 400;">The diverse terroir of Israel undoubtedly plays a key role in what makes Israeli wines so successful. Grapes for wine can be grown in a variety of Israeli environments, from the arid Golan Heights to the lush Galilee. These environments encourage winemakers to try new approaches to winemaking and enable for all kinds of wines to be made from unique, vast grape varietals.</span></p>
<p><span style="font-weight: 400;">Israel&#8217;s wine culture goes all the way back to biblical times. Wine was an important part of the Israelite culture; it is described in the Bible as a sign of celebration and is commonly found in Israelite tombs. As a result, Israel now has a vibrant wine sector that produces a diverse range of wines, from classic kosher varieties to experimental new releases.</span></p>

<p><span style="font-weight: 400;">The Golan Heights in Israel&#8217;s northeast is one of the country&#8217;s most celebrated wine-growing areas. Grapes thrive in the region&#8217;s volcanic soil and high altitude, so it&#8217;s no surprise that it’s home to several renowned wineries, including <em>Carmel Winery</em> and <em>Golan Heights Winery</em>. Wines made from Cabernet Sauvignon and Merlot grapes, as well as Chardonnay and Sauvignon Blanc, are particularly well-known from the area. </span></p>
<p><span style="font-weight: 400;">The concentrated berry flavors, velvety tannins and lively acidity of these wines have earned them a solid reputation. Many of the region&#8217;s wineries also make classic sparkling wines of exceptional quality which are currently earning acclaim around the world. A longer grape growing season results in wines that are more nuanced and well-structured in the Golan Heights because of the chilling effect of the surrounding Sea of Galilee.</span></p>

<p><span style="font-weight: 400;">Galilee, in Israel&#8217;s northernmost region, is another significant wine-producing area. The region enjoys a warm Mediterranean climate with long, scorching summers and short, cool winters. There are a number of small, artisanal wineries in the Galilee, such as <em>Tabor Winery</em> and <em>Domaine du Castel</em>, that make excellent ‘old-fashioned’ wines.</span></p>
<p><span style="font-weight: 400;">White wines like Riesling, Chenin Blanc and Viognier are the region&#8217;s claim to fame. The light aromas, refreshing acidity and mineral overtones make these wines stand out. Rosé wines, often a combination of Carignan, Grenache and Mourvedre, are another specialty of the region. These wines are ideal for the warmer months due to their light, fruity aromas and crisp acidity. Red blends from the Galilee region are well-known for their full-bodied, complex flavors and robust bodies. Their secret? They are composed of multiple grape varietals, such as Syrah, Petit Verd</span>ot and Cabernet Sauvignon.</p>

<p><span style="font-weight: 400;">Apart from these more established wine-growing areas, Israel is also home to a growing number of cutting-edge wineries that are revolutionizing the Israeli wine industry. Two prime examples are <em>Recanati Winery</em> and <em>Psagot Winery</em>. They are using innovative methods and grape varietals to produce wines that are attracting attention within Israel and beyond. </span></p>
<p><span style="font-weight: 400;">They both use a variation of oa</span>k aging and fermentation procedures to create wines with nuanced flavors and interesting depth. In addition to using grapes that are native to the region, they experiment with varietals such as Petit Verdot and Tempranillo. These wineries are also committed to organic and sustainable winemaking methods, resulting in environmentally friendly and delicious beverages.</p>

<p><span style="font-weight: 400;">Israeli kosher wine is one o</span>f the country&#8217;s most defining wine delicacies. Wine is a food item subject to kashrut (kosher dietary regulations), hence every Israeli wine must be certified as such. As a result, numerous Israeli vineyards now produce kosher wines that meet the dietary requirements of Orthodox Jews. The wines must be made in a kosher facility under the watchful eye of a rabbi, and they must not come into contact with any non-kosher substances or machinery throughout the production process.</p>
<p>These kosher wines are often made in the traditional fashion and are lauded for their sapid flavors and lengthy aftertastes. While the Israeli market is large enough to support the production of kosher wine, the country also exports kosher wines to nations with sizable Jewish populations, such as the United States and Canada.</p>

Zichron Yaakov, one of the oldest winemaking villages in Israel, hosts a Wine Festival every year where winemakers from all over the na</span>tion come to pour their wares, give tours and deliver talks to the public. Visitors come from all over the world to enjoy the event and taste just some of the many varieties of Israeli wine.</p>
<p><span style="font-weight: 400;">Israeli wines have been receiving increasing acclaim and recognition in the global wine scene in recent years. Many of the country&#8217;s wines have been honored at the Decanter World Wine Awards and the International Wine Challenge, among others. This provides further evidence of the high standard set by Israeli winemakers. It’s no surprise that these wines are often regarded as some of the very best produced anywhere in the Mediterranean region.</span></p>

<p>Avoid using a glass that has been treated with any type of detergent, as this can also affect the flavor. <h3><strong>Do all whisky glasses have a bulb at the bottom?</strong></h3>
<p>No, the bulb is designed to capture aromas, however some people prefer to drink their whisky from a straight-sided glass, as they find it allows them to appreciate the color of the spirit.</p>
<h3 data-pm-slice="1 1 []"><strong>How do you hold a whisky glass?</strong></h3>
<p>For stemmed glasses, or glasses with bulbs, place your forefinger and thumb around the glass or stem. Swirl your glass around to release aromas, just like you would do at a wine tasting. Bring the whisky to your nose to savor the bouquet. Take slow sips and slosh it around in your mouth, &#8220;chewing&#8221; on the whisky to fully coat your tongue. This will help you fully appreciate the complex flavor.</p>
<p>For stemless glasses, or if you want to warm the whisky, place your fingers and thumb either around the glass or cupping the base. Warming the whisky will alter the flavor for a new experience.</p>

<p>Since they typically feature different courses served family-style, it can be challenging to choose an appropriate wine for this cuisine. It&#8217;s easiest to focus on the main dish, planning accordingly.</p>

<h2>1. Mezze and Sauvignon Blanc</h2>
<p>Cold and hot mezze is usually presented as a starter, consisting of salads, pita bread and hummus dip. Offer a crisp Sauvignon Blanc here, which brings its own citrusy, fruity flavor push. Since it has high acidity, your wine will offset the taste of garlic, onions and tahini, while complimenting the herbs in the dishes; it will also refresh your palate for the hearty dishes to come. A Grüner Veltliner or a Riesling would achieve the same purpose.</p>

<h2>2. Moussaka and Barbera D’Asti.</h2>
<p>The main ingredients of this dish are eggplants, potatoes and a meaty tomato sauce, so you need to opt for a wine with high acidity but low tannins, which will allow the baked veggie flavors of the dish to come through. An Italian Barbera is ideal, since it is herbaceous and earthy enough to alleviate the bitterness of the eggplant and compliment the potatoes, and with just enough tannins to stand up to the meat sauce. The wine also brings forward a wonderful flavor profile of cherries, plums and raspberries. Something light, peppery, and rich like a light red Tempranillo is also perfect for moussaka.</p>
<h2>3. Spanakopita and Fiano</h2>
<p>This delicious creamy spinach and cheese pie needs a full, textural, acidic wine to go with the decadently buttery filo pastry of the dish, which is why Fiano works so well. It’s nutty, zesty and built for rich savory dishes like this one. It also leaves wonderful hints of grapefruit and apricot. For a similar effect, go for an unoaked Chardonnay, Pinot Grigio or a lovely Portuguese Verdelho if your pie is on the heavier side.</p>

<p>A classic Greek finger food, these pockets of spiced rice and meat wrapped in vine or cabbage leaves call out for an equally tasty Mediterranean wine. Look for a Vermentino from the island of Sardinia, light and savory, with little hints of pear, lime, grapefruit, green apple and white flowers – taking you on a journey right back to the beach. Is there a better way to enjoy Greek food than picturing yourself on one of its beautiful coastlines? Mediterranean food also loves Rosé and this dish is no exception.</p>

If the lamb is on the spicy side, Nero d&#8217;Avola&#8217;s chili pepper hints are an ideal combination. You can also offer a simpler wine like a Pinot Noir or a Merlot, for guests who are not as adventurous.</p>

Nothing goes with a hearty Greek meal quite like Xinomavro, working perfectly with citrus, herbs, yoghurt, and olive oil, standing up to protein content and the starchy baked potatoes that dishes are usually served with.</p>
<p>If you want a glass of white, find a Moschofilero: it is rosy, bold and slightly sweet. If you’re looking for something easier to find, open up a New World Sauvignon Blanc, Chardonnay or Napa Cabernet.</p>

In her 1828 cookbook, Eliza Leslie coined the term &#8220;cupcake&#8221; and it became an instant sensation. <p>Preparing the food is an important part of Mexican traditions and culture. Most of the dishes are based on corn, beans and hot peppers, so the choice of wine depends on the amount of heat and source of protein. <h2>How to pair with Mexican condiments</h2>
<p>Mexican cuisine is known for a variety of delightful condiments! These can be chunky or smooth, usually placed on the table as a side dish. The heat degree can vary. It is a good idea to focus on wine pairing with the dominant flavor of the sauce.</p>
<p>Zesty white New Zealand and Mexican Sauvignon Blanc is a great choice for guacamole, salsa and chile to mirror the acidity. Smooth and creamy guacamole will pair well with dry Riesling to cut the fattiness of avocado.</p>
<p>Chunky pico de gallo and green chile will also go well with crisp Albariño from Spain. Spicy red chile will be ideal with off-dry German Riesling. Try to pair hot and sweet salsa with aromatic Chenin Blanc from France that will add notes of peach and honey to your palate.</p>

<h2>Are Shiraz and Syrah the Same?</h2>
<p>Technically, Shiraz and Syrah are the same red wine grape variety and wines produced with those grapes. The difference lies in the winemaking style, climate and regional expression.</p>
<p>Winemakers from the cooler regions, in the new and old world, call their wines Syrah. The classic old world wine comes from northern France&#8217;s Rhône Valley. It is elegant, dry, full-bodied, and deep-colored. It comes in various flavors, from bacon, red and black fruits, smoky, peppery, to strong floral notes. In the new world, many excellent Rhône-style Syrahs come from Sonoma County, California.</p>
<p>Unlike Syrah, the traditional new world wine is not dry but crisp and full-bodied. Winemakers in Australia and other warmer regions call this wine Shiraz. It usually has a higher alcohol content, given the hotter climate. The ruby-purple wine has intense fruit-forward notes of blueberry and blackberry with black pepper spiciness due to oak-influenced aging.</p>
<p>Ultimately, the style of production, not the source of the grapes, will dictate the wine varietal. So, if a winemaker in France chooses to follow the new world winemaking process, the wine can be called Shiraz.</p>

<h2>Aromas &amp; Flavor Profile</h2>
<p>Typically, Shiraz wine has flavors of dark-colored fruits, such as black currants and blueberries. This lush wine also includes notes of pepper, smoked meat, herbs and chocolate.</p>
<p>This is a fantastic combination of sweet and savory tastes! Shiraz wines produced in Northern Australia are spicier than those made in the cooler Southern Australia.</p>

<p>Don’t keep wondering if merely two glasses of Shiraz give you a hangover. Typically, Shiraz wines have 13 to 15.5% <a href="https://www.alcohol.org/statistics-information/abv/" target="_blank" rel="noopener">alcohol content</a>. A few Australian varieties can even have up to 18%.</p>
<p>Most Shiraz wines are briskly acidic, which makes them great food partners. Their adequate acid levels also help them endure warm weather without turning jammy.</p>
<p>There are about 130 calories in a glass of Shiraz with an alcohol level of 15%. The alcohol content provides 120 calories, while the remaining ten come from carbohydrates.</p>

<h2><strong>Aging Shiraz in Your Wine Cellar</strong></h2>
<p>Being highly tannic and acidic, Shiraz wine ages well. When aged inside an oak barrel, the wine is infused with coconut flavors and comfortable, warm notes.</p>
<p>Bottle aging changes the wine&#8217;s color to a light red, causing exciting flavor transformations. Bottle age characteristics blend with the powerful fruit aromas, creating a subtler output. Also, the tannins soften and enhance the complex bouquet of the aged wine.</p>
<p>Most Shiraz wines age comfortably for five to ten years. You can cellar exceptionally age-worthy wine bottles for at least 25 years.</p>
<h2><strong>Serving Shiraz</strong></h2>
<p>The high alcohol content in Shiraz necessitates a slight chilling of the wine before serving to avoid dull flavors. Serving it too cold will mute the aromas, so it is important to <a href="https://www.iwawine.com/wine-bottle-digital-thermometer" target="_blank" rel="noopener">find the right temperature</a>.</p>
<p>Ideally, you should serve Shiraz wine at 60–65°F, i.e. refrigerated for 15 minutes. This way, the full-bodied Shiraz will give back a delightful mouthfeel, supple and smooth tannins, with balanced acidity.</p>
