Crisp fall nights all the way through spring means it is the ideal evening to savor this dessert.</p>
<p><span id="more-5490"></span>Get out that slow cooker and enjoy deliciousness. This gluten-free dessert is the perfect sweet treat to add to your dinner party.  Recently, we were with a dear friend and colleague who reminded us that she serves this dessert often. (Thank you Dianne!) Drizzle the warm butterscotch sauce over the pears and “wow”—it can’t be beat. <h4>Wine Poached Pears with Butterscotch Sauce</h4>
<p>Slow cooker size: 3 ½ to 5-quarts or larger</p>
<p>Divine elegance. There is just no other way to describe this perfect dish. It is beautiful and the warm pears coated in the luscious sauce taste fantastic.</p>
<p>Nonstick cooking spray<br />
6 medium pears, preferably Bosc<br />
2 tablespoons fresh lemon juice<br />
½ cup granulated sugar<br />
¾ cup dry white wine, such as Chardonnay<br />
3 cups water<br />
1 teaspoon pure vanilla extract</p>
<p>Butterscotch Sauce:<br />
6 tablespoons unsalted butter<br />
¾ cup packed dark brown sugar<br />
Dash salt<br />
½ cup heavy cream<br />
2 teaspoons pure vanilla extract</p>
<p>Spray a slow cooker with nonstick spray.</p>
<p>Peel the pears, leaving stem intact. Stand the pears upright in the slow cooker. Brush the pears with lemon juice. Sprinkle the pears with sugar. Add the wine, water and vanilla.</p>
<p>Cover the slow cooker and cook on Low for 3½ to 4 hours or until the pears are tender when pricked with a fork but are not mushy.</p>
<p>Butterscotch Sauce: Melt the butter in small saucepan over medium heat. Stir in the brown sugar and salt and cook, stirring constantly, for 1 minute or until bubbly. Stir in the cream and cook, stirring constantly for 2 to 3 minutes or until bubbly. Stir in the vanilla. Let stand for 5 to 10 minutes to thicken.</p>
<p>Use a slotted spoon to lift the pears out of the poaching liquid and place each on an individual serving plate. Drizzle the pears with butterscotch sauce. Serve warm.</p>
<p>Makes 6 servings.</p>
<p>Tips:</p>
<p>Pears range from golden to green or red and many varieties are great to eat fresh or sliced in salads or for appetizers, while others are ideal for baking. The earthy light brown, cinnamon-colored Bosc pear, known for its long, tapered neck, is recommended for this recipe as it holds its shape when baked so once topped with the warm Butterscotch Sauce, the finished dish will be beautiful.</p>

<p>The pictures below were taken when we last visited this magical place!  We can&#8217;t wait to return.</p>
<p><em>So, for just a glimpse of this beautiful spot, enjoy this post from 2023! The food and classes will be fresh and new, but the fun and beauty remains the same.</em><span id="more-5426"></span></p>
<p>We just returned home from an amazing place! The unparalleled beauty of nature, historic grandeur, luxurious accommodations, beautiful wedding venues, food and wonderful people came together and we know why they call it utopia!  That definitely sums up our time at the <a href="https://innsatstalbans.com/" target="_blank" rel="noopener">Inns of St. Albans</a>, but words cannot really describe it.</p>
<p>We were guest teachers for a culinary camp at <a href="https://innsatstalbans.com/events/" target="_blank" rel="noopener">The Inns of St. Albans,</a> in St. Albans, Missouri.  The historic village, nestled along the Missouri River is truly beautiful. The owners, Datra and David Herzog have restored the grand historic homes and transformed them into incredible event sites.</p>

<p>The entire staff at the inn was wonderful and we developed lasting friendships with the people in our classes. We miss everyone already!</p>
<p>The cooking school is named the International Choux Co., cooking school, in honor of the International Shoe Company. That huge shoe company was co-founded by Isaac Johnson  in the early 1900&#8217;s and this beautiful spot was once the summer home of Irene and Isaac Johnson.</p>
<p>We taught four different classes—Cast Iron Pizza was first, and that pizza was accompanied by homemade herbed ricotta and charred tomato bruschetta, and our skillet chocolate chip cookie. The next day, we shared recipes for a Romantic Picnic that included a fresh green salad, savory Chicken and Swiss Pop Tarts, BLT Deviled Eggs and Blueberry Yogurt Bundt Cake. Then, on to a cocktail party with Mojito Slushies (perfect for a hot summer day), Potato and Salsa Verde Tortillas and Meatball Tapas. A Cast Iron Baking class, with breads, scones, and snickerdoodle bars followed. For the closing event, the chef at the Inns of St. Albans prepared our recipes for a Lillet Spritz, Gougeres, a delicious roasted corn salad with zucchini and summer vegetables, strip steak with herb butter, Bistro Potato and Leek Gratin, and capped it all off with Peach Crostata topped with ice cream.</p>
<p>Do you see why they called it utopia (Not only is it beautiful, their wine, from grapes gown in their vineyard, will be called Utopia, after a commissioned art piece about the area.) It was truly an incredible experience. Little, tree-lined roads, winding from Chesterfield, near St. Louis will take you to the <a href="https://innsatstalbans.com/" target="_blank" rel="noopener">Inns of St. Albans</a>, and it is worth your drive. Check it out! You might book a corporate event or wedding there. Register for the upcoming events and classes or pick up a delicious sandwich at the Head&#8217;s Store restaurant. Or just schedule a time to relax and unwind in a spot so beautiful that you will hardly believe it exists.</p>

<p>If you follow us, you may already know that we love to bake. Just like many of you, we baked more when the pandemic started.  We baked it all, cookies, cakes, pies, and Roxanne baked more artisan bread than she could count.</p>
<p>You might also know that we love to use cast iron skillets. Our cast iron cooking classes always sell out. We explain how to use cast iron and also the stories of cooks in our family who used our skillets and passed them down to us. Our skillets are truly filled with delicious foods, and overflow with precious memories.</p>

<p><span id="more-5279"></span>It is all true, and now you will learn why we can say that. We worked together in the test kitchen for Rival Manufacturing Company in Kansas City. That was forty years ago and the Crock Pot was a new appliance. New, yes, but taking the United States by storm.</p>
<p>It was a super busy test kitchen. We tested several Crock Pots each night (chicken, after chicken, after chicken) —recording temperatures to be sure the pots were cooking correctly. We worked with great engineers who were constantly developing new Crock Pot models and creating new appliances. We worked with Sales and Marketing, helping to tell the story of the Crock Pot, promote it and share the wonders of that new appliance. We talked with so many consumers, answering their questions, encouraging them to try this new way of cooking and helping them get the best flavor of their slow cooker. We developed hundreds (if not thousands) of new recipes.</p>
<p>To say it was a magical time for us, as young professionals, is an understatement. That test kitchen helped us sharpen and expand our skills. It allowed us to work with many people across the country, to test new appliances, and to become skilled in recipe development, PR, customer relations, and being part of a corporate team.</p>
<p>Most of all, it was where our friendship and business partnership began. We are so grateful for that time.</p>
<p>Time has flown by and the Crock Pot is now a kitchen staple. Can you even imagine a world without a Crock Pot? Whether it is for a family dinner, a potluck, the tailgate, cocktail party or holiday feast, the Crock Pot has an important seat at the table. It makes so many cooking tasks easier. It is now the way many people cook and get dinner on the table.</p>

<p>When Jenny Vergara, a friend and fellow member of the <a href="https://ldeikansascity.org/" target="_blank" rel="noopener">Kansas City Chapter of Les Dames d’Escoffier</a>, asked us to talk with her about the history of the Crock Pot and our work in the test kitchen, of course we said yes, immediately. She is a skilled journalist and added so many other interesting voices and perspectives to the story.  It was fun to record the podcast and want to thank her and the entire staff at KCUR for making the story come to life.</p>

We appreciate the many benefits of the toaster oven so much, we wrote a new cookbook, <em><strong>Toaster Oven Takeover</strong></em>, and we are thrilled to announce it will be available April 20!<span id="more-5255"></span></p>
<p>This cookbook has it all, and we had a great time writing it. It is fast family meals that you can get on the table quickly. It is filled with over-the-top delicious desserts, casual-yet-yummy appetizers, fantastic pizzas, great tasting, easy sheet pan dinners, scrumptious sides to round out the dinner, wonderful breads and more.</p>
<p>The benefits your toaster oven offers is incredible. We will share more about that underrated appliance on future posts, but for now, take our word for it that new, electronic toaster ovens are a far cry from those portable ovens available even a few years ago. The more we used ours, the more we loved it and that is going to be true for you, too.</p>

<p>It is hard to pick just one recipe that we might feature. Should it be one for breakfast, lunch or dinner? A sweet or a side? We really love the variety of recipes. A few of our favorites include the Loaded Cauliflower Casserole, Sweet Chili Glazed Wings, Chipotle Glazed Meat Loaf and the Espresso Chip Muffins. We use the toaster oven constantly (and a few of those foods are in a handy chart in the book) to toast nuts, roast vegetables, or broil burgers.</p>

<p>So what one recipe to share today? What about everyone’s favorite—Sheet Pan Loaded Nachos! These are topped with seasoned, cooked ground beef, beans, and cheese. Then, you can dress them up and add your favorite toppings or make them quick and keep them a bit simpler for those teens that always seem to be hungry. Invite your friends for a casual snack on the patio (yes, we wrote this book during the pandemic) or watch your favorite movie and munch on these nachos.</p>

<h1>SHEET PAN LOADED NACHOS</h1>
<p>Everyone’s favorite bar food is as close as your toaster oven. Best of all, you can custom make the nachos with any of your favorite toppings. Gather your friends and enjoy!</p>
<p>Serves 4</p>
<p>1 tablespoon canola or vegetable oil<br />
½ pound lean ground beef<br />
½ cup chopped onion<br />
2 cloves garlic, minced<br />
1 teaspoon chili powder<br />
½ teaspoon ground cumin<br />
Kosher salt and freshly ground black pepper, to taste<br />
6 ounces tortilla chips<br />
½ cup canned black beans, rinsed and drained<br />
1 ½ cups shredded sharp cheddar cheese or Mexican blend cheese<br />
½ cup salsa<br />
Toppings: sliced jalapeno peppers, chopped bell peppers, sliced ripe olives, chopped tomatoes, minced fresh cilantro, sour cream, chopped avocado, guacamole, chopped onion, optional</p>
<p>1. Preheat the toaster oven to 400°F. Line a 12 x 12-inch baking pan with nonstick aluminum foil. (Or if lining the pan with regular foil, spray it with nonstick cooking spray.)</p>
<p>2. Heat the oil in a large skillet over medium high heat. Add the ground beef and onion and cook, stirring frequently until the beef is almost done. Add the garlic, chili powder, cumin, salt and pepper and cook, stirring frequently until the beef is fully cooked; drain.</p>
<p>3. Arrange the tortilla chips in an even layer in the prepared pan. Top with the beef-onion mixture. Top with the beans. Bake, uncovered, for 6 to 8 minutes. Top with the cheese and bake for 5 minutes or until the cheese is melted.</p>
<p>4. Drizzle with the salsa. Top as desired with any of the various topping choices.</p>
<p>Tip: Substitute boneless, skinless chicken breasts, chopped or fresh Mexican chorizo, casings removed, for the ground beef. Cook in a large skillet and season as directed, then top the tortilla chips with the cooked meat. Proceed as the recipe directs. You can also substitute refried beans, garbanzo beans or any of your favorite beans for the black beans.</p>
<p>Convection oven variation: Prepare the recipe as directed. Bake the beef and bean topped tortilla chips on the convection oven setting at 400°F for 5 to 7 minutes. Top with the cheese, then bake for 3 to 4 minutes or until the cheese is melted.</p>
