Makes one 12-in. (30-cm.) pizza. Serves 4–6.

This luscious pizza is topped with a cream cheese mixture, fresh berries,and a crumbly topping.

Ingredients

1/3 recipe basic thin pizza crust (see here)

1/2 cup cream cheese, softened
1 large egg yolk
1/4 tsp. vanilla extract
1 1/2 tsp. sugar
1/2 cup fresh strawberries, hulled
streusel
1/3 cup light brown sugar
2 tbsp. unsalted butter, melted
1 tbsp. all-purpose flour

Method

Preheat oven to 400°F (200°C).

Line a 12-in. (30-cm.) pizza pan with parchment paper. Roll pizza dough out to a 12-in. (30-cm.) round and place in pan. In medium bowl, combine cream cheese, egg yolk, vanilla, and sugar. Stir until smooth.

In small bowl, combine all the streusel ingredients until you have a crumbly mixture. Spread the cream cheese mixture over the pizza crust, top with strawberries, and sprinkle with streusel.

Place on middle rack of preheated oven and bake for 25 to 30 minutes,until crust is baked and streusel is crunchy. Serve warm or at room temperature.

Makes one 12-in. (30-cm.) pizza. Serves 4–6.

Ingredients

It is not surprising to find that fruit makes a tempting topping for pizzas!

1/3 recipe basic thin pizza crust  (see here)
1/3 cup dried cranberries
4 medium apples, peeled, cored, and finely chopped
3 tbsp. brown sugar
2 tbsp. unsalted butter, melted
1–2 tsp. freshly squeezed lemon juice
1 tsp. ground cinnamon

Method

Place pizza stone on middle rack of oven and preheat to 450°F (230°C).Roll pizza dough out to a 12-in. (30-cm.) round. Lightly flour pizza peel.
Place pizza crust on peel, and sprinkle with dried cranberries. In medium bowl, combine chopped apple, sugar, butter, lemon juice, and cinnamon.
Spread apple mixture over cranberries. Gently shake pizza from peel onto baking stone.
Bake for 15 to 20 minutes, until crust is slightly puffy and golden brown.Remove crust from oven and transfer to wire rack to cool. Serve warm or at room temperature.

Ingredients

This spicy pizza will warm things up on a cool evening!
1 recipe basic Neapolitan pizza crust (see here)
1 recipe basic pizza sauce  (see here)
3 cups shredded mozzarella
8 oz. spicy sausage, cooked, halved, and sliced into half-moon pieces
8 oz. pepperoni
1/2 yellow onion, sliced thin
1 small green pepper, seeded and sliced thin
1–2 hot chili peppers, seeded and finely chopped
1 fresh tomato, sliced

Method

preheat a pizza stone in a 500°F
(250°C) oven and roll out two 12-in. (30-cm.) circles of dough.
Lightly dust pizza peel with flour or cornmeal. 
Place one disc of pizza
dough on peel and spread with half the pizza sauce.
Sprinkle with half the mozzarella and arrange half the sausage, pepperoni,onion, peppers, and tomato on top. Gently shake pizza from the peel to the stone.
Bake 5 to 7 minutes, until cheese is melting and crust is puffy around edges and crispy on the bottom. Slide the peel back under the pizza to remove from oven. Repeat with the other pizza.
