So why does it seem like everyone around me is eating gluten!? This blog and podcast were created so I may share my thoughts on everything from diagnosis and recovery to what gluten free foods are actually edible. I may occasionally vent at my frustration of going to a restaurant and not being able to eat one measly thing on the menu (ok, occasional vent #1)! When I was initially diagnosed with Celiac Disease, I felt confused, isolated, and totally uneducated. I mourned for the food I could no longer eat. I felt angry that I had this disease. Why me? I wanted my Tastycakes and I wanted them NOW (ok, occasional vent #2)! I hope this blog and podcast helps you to feel that you are not alone. You WILL be healthy. You WILL be able to survive and thrive gluten-free. Hold The Gluten is a place I hope you will visit if you feel you need to connect with a fellow celiac. When Aunt Matilda makes you a loaf of her famous pumpkin bread (with tons of gluten) and is totally offended when you donââ¬â¢t eat it, take a moment to remember there are others out there going through the same exact scenario. Well, I personally do not have an Aunt Matilda, but you get the picture.
Hold The Gluten 14 - Is It January Yet?!

Episode 14 âIs It January Yet?!â Features:

Wine and M&MâsâDuh - forgot gluten free food at a recent party.

Gluten Free Flours - always refrigerate (4 to 6 months) or freeze
(up to one year). Due to the lack of processing, most alternative
flours will go rancid if not stored properly.

There is no âHoly Grailâ for a GF Flour combination. With flours
such as Amaranth, Buckwheat, Millet, Quinoa, Sorghum, and Teff â use
the 1/3 rule.

Remember that gluten free flours tend to absorb more liquid. You
may need to increase your liquid ingredients to avoid your baked goods
being too dry/crumbly.

Amaranth: Powerhouse for fiber, iron, B vitamins,
and calcium. Works well in baked goods due to high moisture content in
grain. Provides a nutty, grainy flavor. Note - there is a strong
smell/taste with Amaranth.

Brown Rice: Healthier choice than White Rice Flour
due to whole grain. Nutty flavor. Can have a gritty texture (combine
with other flours to combat this).

Buckwheat: No relation to wheat whatsoever.
Buckwheat is actually a herb and related to the rhubarb plant.
Provides a nutty, earthy flavor.

Millet: Non-acid forming, making Millet Flour easy
to digest. Creates a light, crunchy crust for baked goods. Provides a
sweet, nutty flavor.

Quinoa: Works well in baked goods due to high moisture content in grain.

Sorghum: Closely mimics wheat flour. Good for pizza crusts, scones, biscuits.

Teff: Excellent thickener for soups, gravies, puddings, or stews. Provides a mild, nutty flavor.

Donât get glutened over the holidays! Never be embarrassed to ask
questions or double check the labels of that well-meaning family member
cooking for you.

Whatâs your holiday tradition? Have a new tradition youâve created
since going gluten free? E-mail me at celiac@holdthegluten.net

Are you an Gluten Free Eagles Fan? Check out EaglesFanCast blog & podcast.
Episode 4 "Get Tested!" Features:

Discussion on genetic testing and blood tests. Exactly who needs them?

The genetic test for Celiac Disease is known as the Celiac Disease
DNA Test. To clarify even further, specify HLA genotyping of the DQA1
and DQB1 genes.

The Celiac Disease DNA test is most useful for family members of
individuals with the disease â particularly first-degree relativesâ
such as parents, siblings, or children of people who have been
diagnosed.

A Celiac Blood Panel should also be performed to check antibodies.

Celiac Blood Panel tests include: Anti-endomysial antibody test
(EMA-IgA), Total Serum IgA, and Anti-Tissue Transglutaminase (tTG-IgA)

What happens if a family member does test positive for the Celiac Gene but negative for Celiac Disease? What next?

Episode 1 - June 25, 2008

Well, itâs official, the very first episode of my Hold The Gluten Podcast is LIVE!!!

I need to give huge props to my very talented tech-savvy hubby.
Without him, I would never have entered this mystifying world of two
turntables and a microphone. Well, thereâs really no turntables, but
it just sounds hipper.

Episode 1 âIs This Thing On?â Features:

Why I created this podcast.
What the heck is Celiac Disease?
My celiac story - who I am and where Iâm from.

Read the blog. Listen to the podcast. Educate yourself.

A podcast will be forthcoming very very soon...

But in the meantime, please visit my main website, where I will be blogging about life with celiac on a regular basis. This site will serve only as a copy of each episode's Show Notes, and the main feed for the podcast itself.

So stop on over to Hold the Gluten, stay a while, and say Hi!
