Blizzard Blues Buster

I've had a lot of great feedback on my last few posts which is pretty thrilling for a newbie blogger! Thanks to everyone who's reading my "stuff". It's a definite ego booster to see so many great comments-keep em coming!

Now onto today's post. We were able to make it to some Santa Clause Day festivities yesterday before the storm hit so the weekend hasn't been a total bust. Today was my birthday but the blizzard has put all our plans on hold till next weekend. To combat the blizzard blues, we watched a few Holiday specials running on the television today, baked some yummy cookies, and warmed ourselves with hot peppermint chocolate.

BTW, the photo on the above was taken from my front porch this morning before it got too bad outside! It was -12 degrees and windy as heck but so gorgeous I had to share my view with you!

Cake Mix Cookie Recipe
  • 1 box Cake mix (any flavor)
  • 1/2 cup vegetable oil
  • 1/2 cup cold water
  • 1 egg
  • 1/2 cup mix in (nuts, chocolate chips, peppermint, etc) optional
Preheat oven to 350. Mix the first four ingredients either by hand or using a mixer for approximately 2 minutes. Fold in your mix in. Using a tablespoon, spoon batter onto greased cookie sheet spaced about 2 inches apart. Bake for 9 minutes (10-12 minutes for larger cookies). Makes about 2 dozen.

Jenn's Frugal Note: In true frugal fashion, the cake mix I used was Dunkin Hines purchased on sale for a dollar a box before Thanksgiving-no splurging is necessary even for homemade cookies!

Flavor combos-Any flavor cake mix/chocolate chips, Lemon cake topped w/sprinkles or colored granulated sugar, Chocolate cake mix/walnuts or pecans, White or Yellow Cake mix/crushed toffee candy bar, Chocolate cake mix/peanut butter chips, Chocolate or Lemon cake mix/crushed peppermint, Carrot cake mix dusted w/powdered sugar

4 minute Hot Cocoa
Warm one mug of milk in microwave for approximately 2 minutes. Stir. Add 2 spoonfuls of chocolate drink mix (example: Nesquik) plus a small handful of milk chocolate chips. Nuke for another minute or two, stir well, add candy cane and serve w/cautionary warning-IT'S HOT!
